A - Very dark copper color with bright red hues. Light brown rocky head with an excellent retention for the ABV and a nice lacing.
S - Very omplex smell, bready malt (a bit toasted), yeast, scpicies, nutty, some dark fruits and candy sugar. Very typical from trappists.
T - Lots of spicy notes coming from the alcohol. Good malt sweetness with some esters. Raw sugar is lingering next to alcohol and hop for a slight bitterness and some herbal notes.
M - Very smooth mouthfeel. Medium to full body.
O - Inscredible balance and perfectly to style. This beer has nothing on the greatest trappist names, just seek it out!

Opaque, dark brown pour with ruby highlights. Two finger, light tan, creamy head. Lacing is good.
Cinnamon, cloves, vanilla, some candied sugar. Dark stone fruits, a touch of ginger, digestive cookies and a sweet malt backing. Alcohol is quite well hidden.
Dark stone fruits, cinnamon, cloves, strawberries, a metallic taste synonymous with these styles of beers for me. Raisins, cherries and a touch of alcohol in the finish.
Light body, very bubbly and effervescent.

Pours a thick dark brown with a large tan-brown head.
Smells floral and a little spicy, like holiday candy, maybe a little sweet. A little meh.
Tastes sweet, boozy, some spices again (cloves), some bright fruit maybe, or fruit cake. Pretty decent but not what I was expecting.
Mouthfeel is really nice and creamy, but also pretty boozy.
Pretty good beer, I don't care for the spice thing but the beer is nice otherwise.

750ml bottle from 2007.
Pours dark mahogany with amber edging and an inch-plus head of bone. A thick skim coat and plenty of stringy lacing throughout the glass.
Aromatics lead off with sugar-dusted dates and raisins, licorice, and clove-studded apples. Hints of nutmeg, cardamon, and Coca Cola follow through.
Medium bodied with a creamy mouthfeel. A bit tacky.
Sweet malt, brown sugar, and spiced dark rum starts the palate. Star anise, cloves, and some throat warmth step forward.
Finishes with sweet malt and spicy rum.
Tasty BSDA, but after seven years the spice is still a bit heavy.

Appearance: Looks fantastic in my Tripel Karmeliet glass. Head rises quickly atop the chestnut brown beer and leaves nice lacing after it settles down into a halo of off-white foam around the edges.
Smell: suggestions of spices (ginger, pepper...) oak, all shades of fruity esters (apricot, pear, plum), honey, maple. Even at close to fridge temp this tells a story.
Taste: a bit sweeter than the smell suggests. Honey and caramel up front. malt backbone is rich and soothing. Spices and hops gradually pick up during the finish.
Mouthfeel: Perfect medium bodied and medium carbonation for the style.
Overall: A decent beer in this competitive segment (in Quebec terms). Would drink again.

Appearance: It has a nice dark reddish/brown color to it. It has a nice thick beige head that dies down slowly and leaves little lacing.
Smell: The aromas definitely give out hints of dark fruit (raisins, cherries), Belgian yeast, spices, some breadiness, caramelly malts and a touch of booziness.
Taste: Like the aromas, it has a nice dark fruit character, Belgian yeast, sweet caramel, brown sugar and the spices really come out here with some cloves and nutmeg.
Mouthfeel: It has a low carbonation with a very nice overall balance, feel and complexity.
Drinkability: It's a very smooth drinkable beer accompanied with great flavors and aromas. Considering keeping the other bottle for Christmas day. Great beer!

Appearance. Pours a deep orange-brown with a massive, almost 5 fingers of billowy, pale orange/off-white head.
Smell. Fruity belgian yeast, light floral spices, and some sweet caramel malts.
Taste. Some really nice sweet caramel and brown sugar (not in a thick, sugary way though), some light fruits and a little complimenting spices - licorice root, ginger, maybe some allspice and rosemary. Interesting stuff and very nice.
Mouthfeel. Medium+ body with quite low carbonation. Just a little sticky, and I would prefer a little more carbonation.
Overall. The amount of all of the flavours going on really speaks to the brewer's skill and knowledge when using these (I'm asuming) interesting spices. Spices are so easily overdone. Everything is ballanced so nicely and it goes down easy considering the sweetness.

Thanks to David for this bottle. Poured in to CBS Snifter.
A - Dark brown with a very slight bright amber glow around the edges of the glass, but otherwise opaque. One finger of light brown head.
S - Big Belgian yeast and clove aroma up front. Some roast, chocolate and spice are also present along with a lighter banana aroma.
T - Spice and roast up front. Raisins, chocolate, cloves, dark fruit enter in the middle. The finish has dark cherry and some tea-like flavours. Very complex with the various flavors well integrated and no one flavour dominating.
M - Medium body with a huge chew. Smooth and silky. Light carbonation.

Poured from the bottle into my hotel glass, eh what can you do.
Great red ruby body with dark chestnut colors. A fair amount of cola like carbonation, with a minimal tan head. Manages to keep a nice puck and collar. Some nice ring like lacing here in my glass, I wish I had a tulip for this.
Nose brings faint quinine tonic, pie crust, cinnamon, and some sweet mild brown sugar.
Palate comes with a light body and full taste. Mild raisin and mellow brown sugar sense of malt. Prickly slight carbonation but not detracting. No heat or boozyness either.
Overall just a real solid brew from these guys.
