Appearance: Poured with a thumb's worth of head, which I prefer despite the style having a reputation for incredibly large head. It retained exceptionally well and produced good lace. The body is a mostlye cloud yellow brass with ample carbonation, but also ample sediment in the body despite me ensuring there wouldn't be a lot of bottom yeast on it.

Smell: I would say pear is the dominant note, but bread, mild butterscotch, honey and maybe a hint of bubblegum and chicory/endive (which I just learned it apparently called by different names. I mean the green, slightly bitter, salad green with white steams that have slightly pokey leaves) far the in back. It needs warming to fully express, and takes a while to achieve potency.

Taste: Starts with buttery bread malt with pear notes that turns to with a mild hint of honey that turns to a slightly bitter endive and corriander note that seems odd but somehow works as it passes it off to mild banana and a bit of clove and slight alcohol infused bread note to finish.

Mouthfeel: That banana note lingers just a little bit in the aftertaste before a dry bread touch takes over that doesn't go overboard on the dryness. Carbonation helps out the entire beer, giving it much needed levity and does as great a job it can to hide it's high ABV, although it doesn't quite get the job done. The transitioning works, but it's weird as that middle note doesn't feel like it should belong, but somehow it does.

Drinkability: Medium body, despite the high ABV and while it what I would care a "high class" offering, it's still fairly approachable without coming across as snooty. Despite the high carbonation, no issues with gas on this one. It certainly though beats to it's own drum.

Final Thoughts: This is a somewhat different expression of a Tripel then I would typically expect. Normally I'm expecting more orchard notes (Berry, Apple, Peach, Pear..etc) which apart from the pear, don't really show up. Instead this one takes an odd herbal bitter/mild vegetable tone with banana notes that just somehow work. As I said, this beats to its own drum in a weird but good way. If you are getting bored of this style, this is the beer for you. For me, while I do feel I've had several better iterations of this style that fit that moreso fit the mold, I've had many ones that a far worse that aren't as interesting as this offering.

Dominus Vobiscum Triple from Microbrasserie Charlevoix bought a 500 ml bottle for 5,39$. Was made on the
15th June 2021. Reviewed on the 12th November 2021

Look: Pure gold colour, not clear not hazy in between. 1 finger of fluffly white head. Lots of bubble going up like champagne. Very nice looking beer

Smell: Banana, apple, pear, white bread.

Taste: Banana, smokey notes, green apple, vanilla, white bread, very smooth overall, you can t barely taste the 9%. Feels like a 5 or a 6% ABV

Feel: Medium body, light carbonation, there is not much bitterness to it (17 IBU), easy drinking.

So overall would I recommend it ? Absolutely, Tripel is one of my favorite style, easy drinking goes down really smooth, nothing wrong but yes there is better than this one.

Would I buy it again? Sure but La fin du Monde from Unibroue taste better and cheaper in some occasion.

Shining, bright 24k gold body, clear, rapidly forming a cloud white head, though retention is medium-low, it fades to a rim in a minute or so.
Aromas of fresh sweet apples and pear juice, hay, a sense of the orchard, browned butter, honey. Fresh and clean.
Luscious fruit, spice, umami yeast notes, accompanied by a buttery feel, mouth-coating and unctuous; prominent bubblegum sweetness is balanced in the finish by wisps of alcohol warmth; fine, medium carbonation, medium-full body.

Simple but sophisticated, with confident yeast character and a luxurious feel. Excellent.

Clear golden with massive head, good retention and lacing. Clean nose with light hop and mineral. Taste is heavier than expected, malty, biscuit, coriander, clove, bread. Some creaminess and medium body with light carbonation.

Topped with 10 fingers of fluffy white head, on a golden, clear, moderately carbonated body.

Smells of phenols and bubblegum, smoke and asian pears.

The taste follows the nose and is moderately sweet.

Medium, light body with light carbonation. Really covers the ABV.

Got this in Gatineau, QC, around Christmas time. Drinking in New Hamburg, ON, July 30th, 2018. Very good representation of the style.
