Not quite a stout but definitely no lightweight, Cutthroat is smooth and robust. Inspired by the classic London porters, we use dark roasted malts to create a deep, rich color and flavor that hint at chocolate and coffee. We named it Cutthroat as our tribute to the Colorado state fish – with its own rich heritage and unmistakable dark coloring. And while we’re big fans of small batches, here’s to the currently threatened Cutthroat population reaching mass quantities.

Close to pitch black, but when held to the light shows through with some brown and garnet highlights. Thick tan head on top, reduced to a thin layer of tight foam. Nice lacing coats the glass.
Dark toasted malts dominate with plenty of dark coffee. A touch of bittersweet chocolate as well. Some fainting sweet malt hints come in as well.
Flavor is good, but lacks something. Chocolate and dark toasted malts again. Nothing is really in the finish though. A bit simple for me.
Mouthfeel is really good though, except for a bit too much carbonation. Makes this porter sharp tasting. Besides that this one has a nice creaminess to it.
Good drinkability, it has a lot of high points to it, but just lacks in the taste department. I'd gladly have a couple in a sitting though.

12 oz bottle poured into a pint glass.
L - Pours a dark cola black with a tinge of redness. About a finger of cocoa/off white head that dissipates quick and leaves a generous lacing.
S - Cocoa, coffee, roasted malt, dark chocolate, soy sauce, caramel, slightly smoky.
T - Follows the nose with dark chocolate, coffee, cherry, slightly bitter but more on the sweeter chocolatey end.
F - Light bodied, light/moderate carbonation, smooth and creamy yet finishes more on the thin watery side. Makes this very drinkable but other characteristics make this very sippable.
O - A nice offering from this brewery. A porter more on the sweeter end but enough bitter coffee/semi-sweet chocolate qualities to balance it out.
