Notes:
A Golden Ale created by blending the final recipe with its own barrel aged pilot beers fermented with wild yeasts. Each individual barrel contributes a unique flavor from the wood chosen and the cultures resident to achieve subtle complexities that develop(ed) over time. A beer which starts sweet, filling the mouth with fruit-like esters and a mild spiciness, changing to a tart and lingering flavor reminiscent of grapefruit living amidst an earthy, citrusy hop aroma. Thanks to womencantsail for sharing this one at GRG1313’s tasting.
Pours a murky orange with a foamy orange-white head that settles to a small cap on top of the beer. Foamy swaths of lace form around the glass on the drink down. Smell is of malt, grain, fruit, yeast, wood, and wine aromas. Taste is much the same with Brett-like and wood flavors on the finish. There is a medium amount of wood bitterness on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a good beer with some interesting aromas and flavors.

750 mL bottle poured into a snifter. 2012 bottle.
Appearance - Pushes the cork out once the cage comes off. Doesn't gush though. Big white head on an orange body. Decent retention. Slowly dissipates.
Smell - Lots of wine aroma. White wine. Slightly metallic aroma too. Bretty earthiness, but not a lot of acidity. Sweet malts.
Taste - Very sweet. Not really sour at all. No lacto presence. Lots of brett earthiness. Tons of caramel malt and that same metallic flavor lingers. Fairly bitter too.
Mouthfeel - Heavy and overly carbonated. Not sour at all.
Overall - The label touts all sorts of wild yeast and this just tastes like a bretty Belgian strong pale. Where's the sour?!

Pours an effervescent amber with 4 fingers of cream colored head. A little bit of haze to go with great head retention & nice lacing
S: Grassyness & sourness, pears, white pepper
T: Grassy, with green apple peels, grapefruit, a bit sour twang, some dirt & pears & some candi sugar up front. Pears, green appleskins, Granny Smith apple sourness, white& black pepper, a touch of grapefruit, oaky dryness, white grapes & honeysuckle as this warms, plus raspberry tartness . Finsihes with woody dryness, berry tartness, lemons & grapefruit, some sour notes that verge on the edge of funkyness, nice white pepper notes
MF: Medium bodied, lively carbonation, Charrdonay like dryness balances well with hops & fruittyness
Very drinkable, highly complex, probably not sour enough for some. I really enjoyed this. I bet this would go great with some Indian or even some sea food, loved it, a hoppy wild/sour with nice approachability with some wine-like traits

Hazy bronze pour, effervescent with a foamy white head; nice retention and lacing. Funky aroma, white wine and citrus, barrel notes. Taste of pale malts, Belgian yeast, funky grass, white wine, light citrus, with a slight bitterness, and a minor barrel aspect. Light-medium body, and quite enjoyable overall.

Lost Abbey tulip
A: Hazy golden orange color. Tons of carbonation, nearly four fingers of fluffy bright white head. Stays around forever. Maybe a little over carbo'ed. Might dock a little.
S: Getting that barnyard funk. Grassy hops. Green apple and some citrus just like label says. Some tart wine grape is there with the funk.
T: Tastes like a Belgian golden ale. Spicy Belgian yeast. Then that barnyard funk presents itself. Green apple and white grape flavors. If there is barrel it's minimal wine like character oak. I'll have to let it warm up.
M: It's nicely carbonated making it a light bodied medium. The ABV is dangerously hidden. Drinks much less.

Poured into a 12 oz snifter
A: Reddish orange with a solid 3-4 fingers of head
S: Really nice, like I hope for in a wild ale. A lot of sour-like smells I associate with the wild yeast strains and some nice sweeter tropical fruit notes to balance. The smell got me pretty excited.
T: Not what I expected or wanted really. Really fruity sweet and very boozy. This would have worked for me if some of the tartness would have come through, but for me it didn't.
M: Insanely over-carbonated, distracted from the taste
O: I wanted to like this, I really did. Could be because I found the taste so different from what I was expecting base don the smell. Also, I thought that it ultimately lacked the tartness (even a little would have been nice) that I have come to appreciate from a wild. I bought two bottles and will let the other age for a while, perhaps that will change my perspective.

This was a big brew so I needed a wingman to assist. Thanks B.
A: Poured a beautiful copper color. Monster three finger fluffy off-white head with lots of yeast floaties...amazing lacing and retention 30 minutes after the pour.
S: Slight fresh hop aroma, lemon zest, butterscotch, little to no sweetness, granny smith apples with an alcohol twinge.
T: First wave is grapey sourness and white wine. Body is similar to a lemon bundt cake that has combined with holiday pumpkin bread. Last wave of flavor is loaded with a sweet oaky resin and smoky char. The barrel aging makes for an evolution of flavor.
M: Mild alcoholic burn. Slightly sticky and finishes very dry. Abundant carbonation if not overwhelming. You could power a hot air balloon with this thing.
O: I don't know what gave me a harder time, the fallen mutt or the labyrinth of flavors from this titan of a beer. This beer is complex so don't go at it alone. The aging in the wine barrels really elevate this beer to something special.

750ml bottle poured into a tulip glass. In hindsight, I wish I would have held out and let this age some more, I think it would have tamed the froth a little and made the flavors more pronounced. That being said, I'll be getting a cpl more and laying them down for later!
A- Dark reddish-orange and hazy with a ridiculous amount of frothy head, so much so that i felt it detracted from the beers appearance. Very little carbonation left in the brew, no runners bubbling up my glass.
S- Really picking up the sweet wine smell,laced in with citrus. If I could say summer had a particular smell, this is reminiscent of it for me. Evokes a good feeling.
T- The best representation of a wild ale I've had so far. Where others really have the wild yeast dominate, this one has a balance that makes it much more drinkable for me. It is sweet throughout, also somewhat peppery. Some sourness, similar to the acidity in a lemon, tangelo or grapefruit. Theres alot packed in there and its still not overwhelming, cant detect the high ABV as a result.
O- I'm very impressed. On the short list of my beers to remember this year. And I think this one will be even better when aged!

750 mL bottle courtesy of skycracksopen. It was poured into my Bruery tulip.
Deconstruction pours a lightly hazy orange, with about three fingers of fluffy white foam crowning the beer. Head retention and lacing are both surprisingly good for a high ABV wild ale. The nose is highlighted by some fruity white wine aromas, with supporting notes of alcohol and cracked black pepper. The flavor profile leads off with some peach centric stone fruit notes. Some clove and pepper phenols follow, before a vinous acidity jumps to the forefront. A muted earthy funk then fades in to provide a mild finish. The body is fairly dry, especially considering the ABV. Carbonation is a little low though, leading to the mouthfeel feeling just a bit flabby. I love the idea behind Deconstruction, and the end result is a very fine wild ale.

Blind BIF 7 beer review:
Pours a dark golden color with an ample white head. 4.0
Big smell of Brett fats off the giant head. Further smelling leads to more flavors of Brett and additional light apple. Smells pretty nice. 3.5
The taste is confusing. The presumed Brett not only drives the flavor, but dries out the finish substantially. First pass, a bit of metallic joins smaller amounts of malt sweetness. More time and the beer opens up to bring more of that apple flavor, no more metallic and improved balance of sweetness. It reminds me of some odd combination of Fantome Extra Sour and Jacks Abbey Biere De Garde Brett beer. That slightly fruity sweetness that emerges over time and the (again presumed) Brett dryness are clearly not for everyone, but I am digging it as I explore further. 4.0
At first, this beer was over carbed with a medium body and some fear that I would never get through it. As its opened up, it's become highly drinkable. I am having trouble with the ABV because the sweetness that normally gives things away is covered by the dryness. 4.0
Overall, I was suspicious that this would not be all that great early, but it has really grown on me. 4.0
Reveal - Odell Deconstruction. Woah! Partially wine barrel aged blend of golden ales with "wild yeasts and lacto". The presumably white wine barrels totally threw me off. Very interesting! Thanks for the awesome start!

Pours a dark golden amber color with orange hues. A ton of frothy, white head (more than can fit in a glass, this one took a while to pour). When it settles the head just stay at around a finger. Nose is very sweet and sour. Tart white grapes, apple cider, pears, sugar, a sharp tartness and not a hint of the 10.5% ABV. The taste is really complex. Honey, white grapes, tartness, sugar, crisp apples (like a Honeycrisp), pears, apricots, bready malts, yeast, a hint of clove, ginger, pineapple, papaya, grapefruit and just a little tiny bit of bitterness. The alcohol never once shows itself. There might be a little heat down in the pit of your stomach but thats it. I usually don't like golden ales but this is beautiful. I'd like to get another one and put it away for a bit and see where the yeast takes it.
I feel like this beer is damn near perfect and its not even my favorite kind of style. It has so much complexity yet its elegant and it works well with itself. Sometimes the more complex beer have flavors that fight each other, but these work so well together that I actually had trouble picking out the individual flavors I was tasting beyond white grapes and honey. I just brought some of the scores down to 4.5 because it isn't quite perfect but its about as close as most beers could dream of being.

Latest offering, I presume.
At cellar temp, the cork shot out of the bottle when I removed the cage so, watch out!
The foam goes all crazy when I'm pouring..it keeps on growing and growing. The beer looks a slightly hazy gold but it still occupies only 1/4 of the glass.
The smell has a lot of but not necessarily strong malty and tarty notes to it. Spicy too. Faint hints of Brett. 42% aged in wine barrels...I expected a stronger tart presence.
The taste is spicy, has fairly big notes of bread, some mild tartness being of the fruity kind. Big booze here. Very warming and it's going to cut the drinkability big time. Some earthy malty notes is what I'm getting now. Whoa...this is a real beast of a beer. I predict I'll need to chew on a few Tums shortly.
I say this is full bodied, carbonation is lighter than I expected after the cork shot out of the bottle.
Overall, a rather difficult beer to drink as is and imho, not one I'd see improving with age, but I could be wrong. I guess I won't find out. One and done, for me. I'll stick with The Meddler, thank you very much.

Pours a murky crimson gold, pretty still, two fingers of dense white head that laces nicely.
Rich smelling stuff - warm boozy grains, funky corn starch, pale fruits... blueberry & melon, a touch of citrus, invitingly sweet but balanced nonetheless.
When I had this last year I remember thinking it was overwhelmed by the wine barrel - not the case here. Funky hot fruits play alongside sweet bread/caramel. I actually wish there was more wine barrel here... I'd be very interested to see how this one evolves with time. Not quite enough 'wild' for my liking but still plenty of other complexities to keep things interesting.
Surprisingly drinkable, exceedingly delicate.

The cork popped out on its own immediately upon loosening the cage - sounded like a gunshot!
Poured a deep gold color, slightly hazy with lots of carbonation; thick and chunky head. Aroma came out with a mixture of floral hops, fruit (oranges & lemons), caramel, and a bit of spice. Bitter and tart flavor with a nice malt-like backbone; slightly buttery; a decent alcohol warmth creeps in near the finish. Crisp and sharp, medium-bodied; acrid, tingly and zesty on the tongue.
I don't have a lot of experience with wild ales, but this one holds my interest. Crazy mixtures of flavors and feel combine into an odd but appealing taste overall. An interesting beer to sip and discover and experience a variety of nuanced tastes.

this is pretty epic stuff, worth the 15 dollar price tag for sure. pours a rich autumnal red color with a tall and dense off white head last leaves pretty lacing all over the glass. the smell has a lot going on, im picking up red wine, oak, spicy yeast, alcohol, golden raisins, and something tart and puckery. the flavor is equally complex, fruity from the yeast but made almost hot on the front of the tongue from the alcohol and the funky lacto making this beer rather piquant. iver never had anything quite like this. the barrel aging does a lot of the flavor, adding some dank earthy tones and some acidic properties and fruit esters. the feel is great, fuller body for a golden ale, just layered in texture. ultra effervescent carbonation and high abv make it sting a little bit. overall one of the best odell brews out there, which is saying something, because everything they make is excellent. it went perfectly with some homemade yak sausage over smashed purple potatoes, and heirloom tomato salad, and fresh green beans. it brings summer and fall together like no other beer ive had can do. deconstruction is much more than the some of its parts, this is special liquid.

Huge bang comes with the pop of the cork. Head rises large and with white foam. Brew is cloudy light brown with lots of orange and some slight red. Some rather strange spotted lacing too.
Funky red grape scent. Smells slightly tart. Green apple is also present. Lots of farmy scents. Tangerine is there too.
Very smooth middle with rough edges; its a good thing. Heat is mildly detectable, but will fade with age I'm sure. No tartness, but quite funky in a great way. Heavy carbonation and medium body.
Another very solid brew from Odell.. Please keep these great brews coming.

Well, as a self-described golden ale, this hits the nose on the appearance. Gold, semi clear...some haze. BIG head, fluffy, white, rocky, sticky. Yum
Aroma is faint. Apple, pear, some tartness. A touch of alcohol and florals. Spicy, white pepper
Taste follows the nose. A quick burst of sweet biscuit dough up front. Floral and spice in the middle. Apple, pear and persimmon towards the end. The end is sharp, spicy and dry.
A very nice beer. Flavor could be a bit more put together. This beer seems to concentrate on feel first...and it feels purrty good.

A: large frothy head with excellent retention on a clear golden with amber hues body. decent lacing.
S: pineapple, orange and grapefruit very sweet citrus. Lots of corriander, pepper zest, spicey yeast and mild oak.
T: this one is very sweet and takes a little while to get used too. Almost like a reisling wine. Lots of citrus, herbal notes, corriander, honey and mild oak.
M: oily and medium degree of body with moderate carbonation
Overall: good tasting beer but strange. Lots of white wine character with the bourbon and oak more of a distant note.

A - Pours with a huge head of white foam that rises over time rather than settling down. Excellent retention and thick rings of lace.
S - A spicy, phenolic aroma of coriander, cloves, champagne, and pepper.
T - Bready malt and spicy yeast notes up front with clove and pepper. A hint of juicy pear in the middle that is quickly pushed aside by sharp, spicy notes of lemon peel, coriander, dry white wine, and pepper.
M - A medium-thick body, high carbonation, and a sweet finish.
D - I don't quite know what to think about this one, the spicy character is really strong and almost comes across as harshly phenolic. The malt is strong and while it finishes sweet, it has so much sharp spice character that is seems relatively balanced. There is a very champagne-like quality to this beer and if you are a fan of that sort of thing you may enjoy this, I however am not big on champage and this beer doesn't do much for me either.

2010 vintage purchased at Dennis Brothers on the way to Darkness Day that year. Finally got around to cracking this for July 4th, 2012. Served in a pint glass.
A - Slow but persistent gusher. Big white foam settles to a chunky cap and splotchy lace. The initial pours are a largely transparent golden, but subsequent ones get increasingly murky.
S - Lots of oak presence, along with some spicy yeast, bourbon, and brett flavors. Mildly phenolic, with some lightly vinous character as well. Some sweet pale malts round out the profile, and this has a slightly aged quality to it. I get the feeling I'm not the biggest fan of Odell's house brett strain.
T - The taste has a bit more malt backbone, with some doughy caramel and buttered biscuit sweetness. Barrel influence is heavy, with spicy oak dominating and bourbon in the periphery -perhaps a bit of dill too. Mildly phenolic and peppery notes, along with some fruity esters, rounding things out. Alcohol is pretty tame at this stage. I'm surprised I get any vinous character with only 2% of the blend coming from that type of barrel. Mildly tangy and sour brett finish.
M - Very dry, with lots of tannic oak. Fairly big in body, with medium-low carbonation and mild acidity in the finish. Again, alcohol is well-disguised.
D - This was enjoyable for about 8oz, but quickly grew fatiguing afterward. There are a lot of flavors here, and they don't always work in harmony - the malt bill seems oversized and at odds with the brett and bourbon flavors. Perhaps this would be better as a 7% beer?

This is the first time I have sampled a style called American Wild Ale. Very much towards the Belgian category in flavor and appearance. The head was almost impossible - it just kept rising no matter how it was poured. Even the "special" Samuels Adams glasses couldn't contain them. I've had quite anumber of styles aged in bourbon casks or with bourbon chips snd they are usually the darker porters, stouts or black IPAs. This was very light golden (thus the name I guess) - it even could pass for bourbon in color appearance ('cept for the carbo and head of course). A VERY COMPLEX flavor profile; I warmed up to the flavor gamut by the time I finished the 1st glass.

Very carbonated beer, first pour into a Odell tulip fills the glass with effervescent white foam easily 5 fingers high. Next pours were much less vigorous netting 2 fingers of creamy white froth over a elegant gold body. Ridiculous retention, took 10 minutes to get the first glass filled. Leaves fluffy white lacing all over the glass.
What a nose on this, unique and complex. Immediately hit with a light amount of barnyard funk, acidity and floral fruity notes. C hops add complexity with grapefruit, orange blossom coupled with fruit complexity from the Fester yeast and wine barrels. Apple, pear, white grapes skin, lemon zest and cherry tartness. Barnyard funk and a peppery sharpness on the end. So far none of that oak, bourbon or malt bill. Still incredible.
Starts off with a bit of sweet pale malt and honey and quickly begins to set off fruit notes of green apple, pears and white grapes and funk. Evolves with less hoppiness than let off in the nose with a slight grapefruit which smooths out with a touch of vanilla and nuttiness. Finishes with a light tart kiss of cherry and lemon zest. Didn't get too much of the barrel in the flavor but the yeast and wine barrels really shine.
Carbonation is such a big player in this one, lively and even biting at times. Really helps to stir up the flavor over a medium body and well hidden alcohol.
Saved reviewing this for my 200th review on BA. Incredible beer. Wonderfully complex, balanced and comes with good memories each time I've opened one wish I had more bottles of this.

Sampled December 2011
A soft pour into my large Tripel Karmeliet tulip nets me over 6 fingers worth of pale tan colored foam; this beer is definitely excessively carbonated. The beer is a dark amber color that shows a mostly clear, amber hue when held up to the light. The aroma smells of tart apples, woody oak, perhaps a touch of buttery oak, a toasted oak and pale grain note, a hint of bourbon like fruitiness, lots of pear notes, dried hay like grain character, honeysuckle and even some honeydew melon notes.
Lightly sweet up front, the beer is quite fizzy and picks up a tartness as it rolls across the tongue. There is a lot of fruitiness in the flavor too, with notes of pear, green apple, perhaps a touch of honeydew melon as well as a touch of a more musky / funky melon (musk melon / cantaloupe perhaps). The oak character is pretty prevalent in the flavor too and it contributes a definite buttery oak note, a somewhat astringent & spicy character (this helps to dry out the finish), a nice hint of raw wood plank and perhaps a touch of Bourbon like character (though this last comes off more as oak than Bourbon). The slightly rancid, buttery oak character in this beer seems to be not wholly oak derived; there is a mustiness, a slightly musky funkiness and a hint of plastic / funky phenolic notes to this beer that add some complexity as well as sharpness (in combination with the oak) to this beer. The pale malt character plays a nice supporting role here, there is a definite pale grain chewy / almost-sweetness here, a touch of honey-like malt, a definite dried straw pale malt note and a touch of pale French Bread character (like the crumb inside and not the crust), . This is definitely fairly light bodied for a beer of this strength, it has some viscousness and heft to it as it crosses the palate, but it doesn’t feel heavy, despite being a sipping beer (the alcohol, oak and complexity are what contribute to this last factor).
I am surprised that the Bourbon barrels are not more noticeable here, it does make up only 20% of the blend, but it can so easily be overwhelming; I am quite enjoying that it is so subtle here. On the other hand, 3% for the wine barrels seems like a missed opportunity here; I would have loved to see a more complex wine-barrel influence to this beer. Overall the oak character is perhaps a touch too strong to be in balance with the base beer, but it is not so much that the base beer is completely lost. Despite the oak being a bit too pronounced here, it seems that the bright fruit character plays the leading role. This is complex enough to be interesting and enjoyable, but the complex notes are not as well integrated as they could be and the totality of this beer suffers a bit because of this. Still this is quite an enjoyable beer and one I am happy to experience over an evenings time.

Last bottle of DeConstruction :( Poured to NBB globe after a day spent at the brewery (highly recommended). The beer pours from an uncorked bottle a murky yellow orange color with a nice 3 finger cream colored head. Excellent retention and lacing. The aroma is powerful and pleasant. Belgian character is first noticeable along with some earthy tones from the hops, spicy, fruit character on the back end with pear and peach tones. The beer starts with the belgian yeast flavors and quickly turns slightly tart and spicy. The malty sweetness develops and mellows the flavor. Hints of peaches, pepper, and oak. Slightly sour in the tartness. Lighter bodied with good carbonation. Finishes crisp and clean with a lingering sweet tart flavor. Overall, I enjoyed the beer very much. Sad I don't have another bottle...perhaps they will brew again!
