Hand-numbered and dated bottle signed by the brewer. #2487 bottled April 15, 2009.
The cork comes out with a barely audible pop.
Served slightly chilled in a goblet, Woodcut No. 2 is a medium amber color with good clarity. The head is short and entitles fast leaving no lacing behind. So far it's looking like an English old ale.
Aroma is really exceptional. The oak aging process has certainly had a positive impact on the nose. Great sweetness and a wonderful oaky vanilla quality to it. Good orchard fruit and port wine characteristics here.
Flavor is better than I ever imagined. I wish now that I would have tried a bottle fresh but, right, now, it's drinking very well. Sweet caramel malts come first, very smooth and mellow. Then the oak aging makes itself known with the vanilla. It finishes very smooth with a bit of tannic pull and a dry slightly boozy end. It really does feel like an old ale style and the last three-plus years have been good to this beer.
Mouthfeel is medium bodied, a little syrupy but not cloying. The carbonation level is perfect, nice and low, with the alcohol only showing itself in they way it warms the body.
Overall a truly exceptional beer. I had been holding on to this one so long, I had started to worry it would be past its prime. Fortunately, it's perhaps just hitting its peak.

Bottle #4662 4/20/09
Poured in to a tulip, slightly hazed copper color. No head. Looked under carbed.
Aroma had strong notes of vanilla and oak. Malty sweet. Slightly raiseny and light honey.
Taste was malty, floral and sweet. Light caramel and honey. Some good amounts of vanilla and oak. Somewhat chewy in the finish. Moderate signs of ABV.
Mouthfeel was medium/heavy body, low carb and chewy/sticky finish.
Decent overall. Probably aged past its prime. Flavors are blended, but almost overly sweet. Still enjoyable

Thanks Ben for this one! Served in a tapered pint glass, it's a bright golden orange, thin layer of white foam that leaves a little bit of spotty lace in the glass.
Toffee, almond, sawn wood, presumably oak.
Dry oak tannin, sweet malty flavors of toffee, almond and vanilla from the wood. Full bodied and smooth, light lingering bitterness. Balanced but showing its age now, three years and counting. Still enjoyable but smoke em if ya got em.

A-- Poured a hazy, yet almost clear orange copper color. Light sandpaper colored film, on aggressive swirling get thick layer of film head that settles back to a light film, or at best a collar. Some ABV legs and some a few bits of spotty lacing.
S-- Warm vanilla, lychee, oak, carmel, and a lot of malt. Oak and vanilla dominate in an inviting way. Alcohol is restrained but lets me know it is there.
T-- Jam like. Toasted oak, vanilla bean, carmel and slight strawberry jam. ABV is very restrained. Hops are quite gone.
M-- Low carbonation, nearly heavy bodied. Comes and goes between medium to heavy bodied. Sticky and sweet in the mouth. Quite coating in the mid and back palate. Strawberry, Vanilla bean, and dry oak finish that is inviting.
O-- A little too much vanilla bean and floral character at times but a solid, solid beer. Oak has been very kind to this. Easy drinkability even though more of a slow sipper. ABV is there but nothing too insane. Feels more like an 8% beer than 11%.

Bottle No: 4572, Date: 4-20-09, Brewer: Corkie Odell, all written by hand, pretty sweet.
Pours a hazy, viscous, border-lining syrupy dark golden amber with pretty much zero head and small bubbles along the edge and cap. Some small white bubbles can be generated with a swirl but not too much.
Aromas of sweet honey and caramel maltiness. Lighter fruits emerge slightly as it warms, mainly golden delicious apples and juicy pears. Light light oak and slightly stronger vanilla also are detectable as it continues to warm. All are fairly mellow to be honest and I fear that time may have not been too kind to this beer.
The tastes are luckily much more dominant than the aroma would have let on. The same honey sweetness and caramel maltiness open, then the vanilla jumps in, much more so than the aroma. The fruits are in the background here, red apple and ripe pear once again. Oak is there but really quite tame compared to all the other Woodcut Series beers or any wood-aged beers for that matter. Alcohol has subsided and is felt in the stomach and luckily not on the palate.
The mouthfeel is medium bodied with zero carbonation. Luckily the body isn't too heavy or this could have become a syrupy mess. The oak-aging adds a light tannic and drying balance to the higher than normal sweet malt base.
Overall this was a super beer, despite the flat appearance and less than complex aroma. The flavor is so balanced and delicious despite not being overly complex. I wish I would have had this about a year ago because I imagine the wood imparted flavors would have been more detectable/enjoyable. Despite that, this is definitely my second favorite Woodcut I have had to date, only behind the No. 3. I would recommend to anyone who still has a bottle of this to consume in the near future because it isn't going to get more drinkable anytime soon and I can see the flavors begin to fall off in the near future (just had a No. 1 a couple weeks ago and it is def on the way down).

App- A sticky looking caramel brown pour with an offish white/cream color head. A little bit of cling as it hung to the sides. Maybe a few dots as well.
Smell- A lighter aromatic than I thought it would be. A touch of caramel, a bit of oak and a bit of booze. A tad well rounded as it melds quite well.
Taste- This had a very unique taste for me. I got a lot of caramel and then it moved into this weird oaky apple flavor. A bit of a golden/green apple and a touch of booze behind it.
Mouth- Medium bodied and medium carbonated. A golden apple with a touch of caramel remains on this one.
Drink- I think this was still an above average oak aged beer but a bit colder the flavors wouldv'e popped a bit more. Still tasty and inviting. I'd like to have more.

Bottle shared by a generous soul.
Pours a clear golden color with a slightly off-white head leaving solid lacing.
Smells of light malts and booze-soaked pears. Also present are solid amounts of oak and lighter amounts of vanilla.
Tastes similar to how it smells, though not quite as complex. Crisp light malt flavors up front are joined quickly by syrupy pears. Midway through the flavor profile sweetens for a moment before spicy oak tempers the sweetness. Light hints of vanilla come in near the end before fading into a crisp and slightly boozy ending. Mouthfeel is good, with active carbonation.
Overall this is a very interesting beer that didn’t let the oak and booze overpower the nuance. Well worth a shot.
