A - Tightly packed, shaving cream-like head. Tons of carbonation in this cloudy, pale yellow beer.

S - Peppery spices jump out of the glass, as well as a nice pilsner malt character and some tart orange peel. Lots of yeast-driven aromas, much like a Belgian ale than an American wheat.

T - Really wonderful combination of flaked wheat, light grain, yeasty phenols, lemongrass and peppercorn flavors. Starts sweet but ends slightly tart.

M - Chewy mouthfeel and somewhat tannic.

O - This is everything I look for in a wheat beer. Borderline Belgian-style wit. Good to know Bloomington has another respectable micro/nano brewery!

Poured from the bottle into a tasting glass.

Clouded appearance. Straw pale color. Creamy appearance. Head off white in color and thick.

Nose is full of spices. Clove, banana (low), cinnamon, coriander. Some wheat beer like phenols reminiscent of clove and coriander are powerful. Very good and strong nose overall. Some apparent Belgian yeast smell is observed as well.

Taste is pretty much similar to the nose and is delicious. Very nice mix of spice flavor for a wheat beer. I like the taste overall. Finish is on the spicy dry side. Some sweetness. A good Belgian type hint in the taste.

Almost light to medium feel. Creamy. Slight thickness due to wheat proteins. Moderate carbonation.

Very much recommended. Not a seek out beer, but definitely a stand out performer.

A very solid brew. I drank it a little colder than room temperature and got the full taste, very good wheat beer. The small bite at the end almost contracts your jaw and is almost similar to what tasting a sweet/sour soda pop would be like.

When to drink: a good beer on a warm summer night. Good to mix before a meal of red meat. Suggested meal, a burger with fries, and a cold glass of Cutters' MONON.
