From a 750 ml into a tulip.
A-The beer pours a cloudy, pale-hued golden color with some visible carbonation. The head is short-lived, thin white foam. No lacing.
S-The smell is quite tart with a slightly lactic, earthy funk. I detect some apricot, unripe apples, and a bit of oak.
T-The taste is also tart from start to finish. The brew is highly acidic with flavors of white grapes, unripened apples, some lemon, and a touch of funky oak. I find it difficult to pick out unique flavors, but there is a sort-of sour white wine note to the beer.
M-Feel is light to medium in body with a refreshing hit of carbonation. The finish is long lasting and sour.
O-I enjoyed this beer and I think other sour fans will, as well. There is nice, almost-geueze-like quality to this beer with the tart flavor, milder ABV, and bubbly mouthfeel. It would score higher, but the flavors are not as complex or distinguished as my favorite sours. Lack of complexity notwithstanding, I would readily drink this again.

Bottle from the first batch so quite a few years old.
Light fizzy head fades instantly, slight hazy golden orange like yellow.
Nose great Belgian malts, light sour malt and lemon like and hint of citrus orange peel too, light lacto and other souring funk, hint of fruit, light peach and apricot like stone fruit.
Taste again tons of stone fruit, lots of apricot, sour fruit, light sour lacto like flavours and funk, smooth creamy feel, touch if a sour dough malty flavor. Finish is dry, light doughy malt and long sour apricot finish.
Mouth is med bod, very little carb,
Overall awesome. I'll have to get a new batch sometime and see how it compares.

a very different wild ale. like none ive come across. it pours a pale straw color with an inch or more of white bubbly head. there is some fine suspended yeast and an aroma of ripe fruits, wild yeast, and oak. the flavor is super complex, with a funny hint of apricot jam without the sweetness, really farmy from the yeast, dry and acidic like chardonnay barrels, and a lot of spunk. its just so different, balanced, but at stages allowing each element to shine. the oak does wonders for this beer, and I just cannot believe how interesting and bold this is for being just 5% abv. effervescent carbonation and a very light drinkable body with a crackling dry finish. on a night that I drank such beers as zombie dust, crooked stave cellar reserve series, and other rarities, this was a standout amongst them all. I need to get my hands on some more of this.
