Pours a murky, dark-ish copper-brown color with little bits of off-white sediment swirling among the haze. The khaki head is thick and creamy looking and lasts for a considerable amount of time; a few chunks of lace cling to the top of the glass.
The nose is sparkling and fruity; ripe, sour grapes, apple skins, and loaded with phenols. Toasted malts give it a steely-caramel structure, side-by-side with a full-out, sweet ester-laden parade. Some slight spices on the nose, most likely from the characteristic Belgian yeast. The aroma almost gives off a mild sweet-tartness, similar to a Lindeman's lambic, though slightly less pungent.
Sweet, sugar-coated grapes and plums are the first thing that comes to mind when taking a sip. Body is fairly thin and carbonated so much that the brew seems to evaporate in your mouth. Light, deep cranberry sauce flavors start to come out - a tartness evolves, spikes, and lasts for only a split second - it's refreshing and borderline sour and puckering, something you don't always find in dubbels. The infrastructure of Pater 6 is full of earthy, dirty hops and sweet, fruity esters. Some spice noticeable at the tail end, mainly clove, but it isn't as powerful or prominent as it is in many other Belgian brews.
There's a nice little bitter twang in the aftertaste, coming mostly from the hops which turn from earthy to floral as the beer goes on. Aftertaste of wine-soaked bread and light clove. The alcohol in this one isn't strong, but it's phenol characteristics shine through at the right moments. Nearing room temp, this beer surprisingly seems to lose a bit of flavor, but is still nice and drinkable.
Solid dubbel, nice balance of sweetness, earthiness, and bitterness, although I think it may slightly be overrated. I prefer the Prior 8 by a few miles over this one, so if you're ever in a pickle between the two, go for the 8. This is still a nice brew to try once, though, and the lighter ABV tax is nice.

The lively pour is dark caramel brown with a one finger head. The bubbly foam is khaki colored and leaves lace. Subtle dark fruit and bread aroma with some metallic notes. Well attenuated malty flavor, dark fruit and dark sugar with a woody tang. Medium bodied with a slightly effervescent feel, a bit chalky. Decent Dubbel but not one I find outstanding.

There’s caramel and dark fruit on the nose, with fruitcake, and clove.
This feels like a dialed down version of Abt 12, which makes sense. It’s more approachable but less complex and intense. There’s a nice fruitiness, with a distinct golden breadiness and lots of caramel. There’s a touch of clovey/herbal bitterness but it’s definitely mostly malt driven.
This is lighter bodied, but creamy, and super drinkable.
I honestly have not had much from this brewery outside of Abt 12, so this was really cool to try.

Nutty, dried fruits, vinous character. Smooth and subtle, dry, a lighter dubbel
In terms of flavor intensity and heft. Less effervescent than other examples of the style and also lower in alcohol. Appealing, quieter kind of beer - contemplative. Also a nice opener, one that might get lost amid bigger louder beers (Belgian or otherwise).

a: murky dark brown and deep purple color with a silky 1.5 finger tan head that seems to be fading pretty quick
s: fig, plums, and raisins upfront. crusty fruitcake and molasses. brown sugar, leather, and a slight nutty note. caramel, and a very faint earthy note. amazing aroma
t: dark caramel and molasses upfront. huge note of raisins and plums follow. figs and that fruitcake that i got in the aroma arrive next. theres a leathery note and then a pretty big hit of Belgian yeast. a slight alcohol tinge as well followed by fresh crusty bread and a little bit of hazelnut
m: full mouthfeel with strong carbonation, yet still somehow a bit light
o: very excellent beer. nice and complex, but not overbearing and still keeps the mouthfeel you'd expect from a Dubbel

t: dark caramel and molasses upfront. huge note of raisins and plums follow. figs and that fruitcake that i got in the aroma arrive next. theres a leathery note and then a pretty big hit of Belgian yeast. a slight alcohol tinge as well followed by fresh crusty bread and a little bit of hazelnut
m: full mouthfeel with strong carbonation, yet still somehow a bit light
o: very excellent beer. nice and complex, but not overbearing and still keeps the mouthfeel you'd expect from a Dubbel

Cloudy red-brown, big, rocky off-white head, excellent retention and lacing
Cola, dark fruit, caramel, some spice aroma
bananas foster, birch beer, quatre epices, really each sip reveals new flavors
