Thanks to mrbubbler for sharing this one at Retsinis' tasting.
Pours a murky honey brown with a foamy tan head that fades to nothing. Small dots of lace slowly drip into the remaining beer on the drink down. Smell is slightly sour and tart with toasted malt and dark fruit aromas. Taste is much the same with a fruity flavor on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a pretty good beer with some interesting aromas and flavors.

Opens without a hiss. Zero carbonation. Color of cola or root beer. Leaves the glass clean. Not a pretty beer.
Very, very nice aroma. Sharp, sour cherry character, red wine vinegar, red berries, and sweet cognac combine. This really needed to come to room temperature before the aroma became properly expressive and enjoyable. It didn't have much aroma at all at colder temperatures.
Quite sour, sharp berry notes, dried cherry, some vinegar, some caramel bread sweetness on the finish, and complementing oak. Very drinkable and the alcohol is hidden exceptionally well. I like this quite a bit.
Full-medium bodied with zero carbonation. While it doesn't seem distracting or detracting in the moment, this would probably be much, much better with proper carbonation. It may even be spectacular. Disappointing only because of the massive potential available.
I like this quite a bit. Looking forward to drinking this again!

Bottle opened on 3.22.13
A - Pours a very dark amber-brown with only a few dark tan bubbles that disappear quickly.
S - Tart, dark fruit, and barrel-cognac.
T - Tart cognac, sweet dark fruit, cherry, blackberry, wood.
D - Low carbonation with a medium to heavy body.
O - Lots of cognac and barrel here with minimal carbonation. A touch on the sweeter side as well.

Massive thanks to quirkzoo for gifting me this one!
Ugly as sin... pours like a glass of warm root beer... swampy brown body topped with not much of anything at all. Doesn't look like anything you would want to swim in, let alone drink.
Earthy tart berry notes, some toffee malt qualities, strawberry shortcake, maybe some cinnamon, sour fruit, incredibly dynamic. I could sniff at this one for quite a while before getting bored with it.
Lovely... as is the case with other Crooked Stave sours, the powerful sour whop doesn't show itself until about mid palate... overripe pale fruits, lemon, wheat grass, tons of sour plum, tasty stuff.
If this beer had some body it would really woo me.

Crooked Stave Sentience Cognac Barrel Quad. No bottle number, but it was limited to Cellar Reserve members. Served out of a 375ml bottle.
a: Deep ruby red to brown in color. Looks beautiful in the light. No head to speak of as the bottle let out the faintest of hisses. Beer is somewhat clear with some murkiness to it. Not clear but not turbid looking. Beer is beautiful to look at though.
s: Amazing aroma. I don't really know how to describe it. Some underlying funk with sweet malt aroma. Cognac comes through slightly. I get a heavy cheery aroma in the front that goes away quickly. I can see where someone would say it has a BBQ sauce vibe.
t: I find the taste quite different than the aroma. Not sweet at all as the aroma would suggest. Maybe the sourness cuts through the sweetness. Dark fruit really comes out along with cognac and oak. The more I taste it the more acetic it becomes up front. Kind of a strange but good mixture of fruit, oak, cognac and lemon.
m: Beer seems heavier than it should in the mouth, especially with the sourness. The alcohol really is hidden here at 11.5% abv. So far I am not perceiving any hot flavors. The body is spot on here in the upper medium range.
o: I think with time this will be an exceptional beer. I am going to take the remainder of my bottles and place them in a warm dark place for a while and see what happens in 6-12 months. Great beer.

Thanks to Todd for sharing this one. Served in a Hill Farmstead tulip.
A - Thin tan foam settles to nothing. Dark brown body with good clarity to it.
S - A nice blend of sweet caramel malts, vinegar, and cognac barrel. The mixture of sweet and savory flavors gives this a slight BBQ sauce vibe to it, but the integration is surprisingly successful. No much alcohol at all for 11.5%.
T - The taste has a bit less sour vinegar edge to it, but it still sufficiently offsets the sweet quad and cognac flavors. There's a bit of dry oak here, and more dark fruit and bread from the base quad rather than the sweet caramel in the aroma.
M - Medium body, moderate-to-low alcohol, dry and tannic texture, and perhaps the faintest touch of alcohol warmth.
D - There's not an overwhelming amount of cognac here, but this is a very good sour quad that is evocative of Oerbier Reserva in flavor profile and deceptive alcohol content. Crooked Stave has been a bit inconsistent in the inaugural year, but this one goes in the win column. Would happily drink this again.

Wild Quad. Had the bourbon barrel aged version yesterday (no review yet) at the brewery and wanted to see how this compared. Figured this would be a good beer for the Cellar Reserve wine glass.
No pop upon opening. Some rootbeer colored bubbles but no head on a vigorous pour. Body is a deep cloudy brown in color with only some slight red to it. Aroma is very nice with some bourbon (or more likely cognac) and sweet caramel. If you dig deep you can pick up some brett funk but it doesn't dominate. A little dust. Not to dark but some cherry smells. Flavor is different. Not as sweet. Dark sour I would call it. Some lemon and strong horse blanket. Not as complex as the straight quads. Gives you a little pucker in the back of the mouth, almost no carbonation, and a medium body.
Overall, I think this beer grows on you as you drink it. Put a little more carbonation in there (maybe some age would help) and this could be a spectacular beer. Very similar to the bourbon version. I compare both to Boulevard BBQ except these are both more sour than the sweet BBQ.
