Cuvee Three, Possibly one of the best representations of how hard work and diligence can be reflected in the beer that the respective brewer brews...Knowing that to keep up with the Cuvee line of amazing beers, Mr. Healey went all out on Cuvee 3. Dry-hopped and bottled with a Champagne yeast, this is one of the most unique saisons you will ever have.
Once you crack the 750 ML bottle with the Kawasaki green label you can see that the beer is Alive and Kicking. The pour is golden to amber and extremely effervescent. Pineapple, citrus and pine needles BIG on the nose, with a slight Belgian sweetness hidden behind. Extremely drinkable, as soon as it hits your palate you know you are drinking a one of a kind brew. Piny sweet hops dance around on the bubbly yeast bubbles and beg you to take another sip. Mouthfeel is perfect and balanced. This is a VERY refreshing beer for the Geek and novice alike. The finish is medium length and very dry..Excellent. This is my favorite offering (SO FAR) from the Redbud Family and it has LONG legs. This one should age with the best of them. Congrats again Chase of one of the greatest Saisons to EVER come out of Oklahoma! Cheers!

Poured as one of the last of MASSIVE Philly beer week bottle share.
Poured into a 6 oz snifter
Bottles opens with a carbonation proving wisp. Huge, white, fluffy head that settles to a small film.
Smells musty with a bit of peaches.
Taste is tart with a bit of dry fruitiness
This beer is dry with a medium body.
I've been trying to get this for a while and glad it showed up. I will definitely look for again

LOOK: Bright amber
SMELL: Ripe nectarine, faint mint, floral, earthy, citric zest, alcoholic esters
TASTE: Peachy, nectarine, leafy, creamy, hoppy, bitter herbs, green peppercorn, dry, pithy, raw, musty
Pretty damn enjoyable. Nice balance between fruitiness, hops, dryness and drinkability. Stone fruit running wild really makes this a unique brew. Great use of hops. Really happy to see this beer pour bright; brewer's attention to detail shows.

A: Golden honey hue with an absolutely huge head--gushes out of the bottle
S: Pineapple, cider, granny smith apples; this smells a bit hoppy and funky and fruity and delicious; some grains but mostly apple and pineapple juice
T: Dry and fruity--apples and pears mainly; quite dry actually with some subtle spicy grainy presence
F: Bubbly and dry--kind of like champagne, but it works well here
O: I really dig this beer; my first from Redbud and definitely not my last; but a warning, this is a GUSHER

Poured from the bottle into a goblet.
Appearance: This beer is really foamy. There is a lot more white foam than beer at first. The head fades eventually to a layer on top of the pour and leaves a bit of lacing. The color is a very cloudy orangish light amber.
Smell: The smell is quite herbal with a strong hop presence. There seems to be a little hot alcohol in the nose as well, but I may be mistaken on that. I'm also picking up some citrus fruit.
Taste: This is the best part of this beer. Just a touch of sweetness with some citrus tartness in there as well. The herbal notes are there. Quite complex even without the hop bitterness in the finish. The finish is bitter and herbal. There is also some warming alcohol in the finish.
Mouthfeel: Medium body with carbonation that it too aggressive and an extremely dry finish.
Overall: This beer is just a short distance from being fantastic. The overcarbonation was a bit distracting and a pain. If the alcohol in the finish was smoothed out, it would help as well. I would definitely have another given the chance.

Blind beer #7 gift wrapped 750. This beer was shared with my wife. The beer was served in a snifter.
A- 3.5 The body of the beer is a hazy peach coloration. Thick and rocky white colored head. Thick rings of lacing remain to mark this beers rapid passage from my glass.
S- 4.5 A skillful combination of yeasty belgian cloves, citrus hops melding with marshmellow. This beer smells very floral.
T- 4.0 Very dry citrus flavors lead this beers charge at my palate. Nice grapefruit notes, citrus zest, powdery and peppery yeastyness.
M- 4.0 Light bodied a very active and appropriate carbonation accompanies. Very dry character but very nicely executed.
O- 4.5 I think I have a Belgian IPA on my hands but not sure. At any rate I am really enjoying this beer and wish that I hadnt shared this beer with my wife. Call me selfish but I am loving it.
The Reveal: Redbud Brewing Co Cuvee Three. Dry Hopped Belgian Style Ale. Dam this was nice! This was a beer nowhere on my radar and it was wonderful!... I love beer trading as I am able to try hidden gems like this brew. Thanks again Thirstyherf for another wonderful beer treat!

750ml into a tulip.
Sunset orange with a gigantic head that sticks around. Plenty of tiny bubbles can be seen rising to the top. Big lacing. Increasingly cloudy and pale as the bottle is drank down and the yeast is introduced to the glass.
Grassy, earthy hops with white pepper on the nose at first. Other notes of spice and lemon zest come through as the brew warms. A touch of coriander as well.
Lemony in the beginning but moves into those grassy hops rather quickly. Not as much spice as the nose but those white pepper and coriander notes are definitely there. A little bit of sourdough bread too once the yeast is introduced.
Medium bodied with a zesty carbonation, and a little bit of drying.
Good earthy hops with a nice lemony subtle sweetness and spice throughout. A nice surprise from Oklahoma, looking forward to trying my other bottles from them now.

750 ml. Pours a cloudy gold with a huge amount of head and lacing. In fact several minutes after I poured the first glass, the remaining beer in the bottle spontaneously foamed over. I'm not typically into Belgian beers, but I'm slowly coming around. Light citrus and grassy aroma. Orange and lemon muted with grass and white pepper. Champagne-like mouth feel, very dry finish. Nice delicate balance. This was a very tasty but subtle brew.

Thanks to Jason for sharing this one. Served in a Cigar City snifter.
A - A huge white foam settles to a thin cap and thick collar, leaving behind spotty lacing. Murky peach body. Be careful when pouring or your glass will overflow.
S - Lemony hops, white pepper, phenolic yeast, some lotion, and nice pale malt sweetness. Interesting and balanced collection of flavors.
T - Taste is a little less exciting, but it's still quite enjoyable. Nice lemony saison, with pale malts, stone fruits, and negligible alcohol presence. Not as much spice or yeast character as the aroma, but that actually makes it easier to drink.
M - Smooth texture, medium-light body, pleasant active carbonation, and a very clean, slightly dry finish.
D - This is a very nice Saison, and probably the best thing I've had from Oklahoma. I'll have to make a point of acquiring other Redbud offerings to see if they are similarly enjoyable. The dry-hopping and champagne yeast work really well here.

Thanks to thirstyherf for hooking this bottle up in a trade.
A - Poured a golden color with a white head that leaves lacing behind
S - Is of fruits spices funk and yeast
T - Lots of fruity flavors then the spices come out and finishes a little funky and yeasty
M - This beer has a light body with high carbonation to it
O - This is a very good beer that you need to get some Oklahoma BAs to send you some one of the better stateside Saisons out there tastes great I think I could drink this stuff all night definitely worth hunting down
