Poured into a tulip. This one pours dark brown with a large tan head. It's apparent there is a lot of carbonation.
Cocoa on the aroma with some tart barrel notes in the background. Kind of fruity overall. Dark fruits on the start of the pallet with cocoa on the finish. Good balance.
A little bit much on the carbonation and the body seems a bit thin. Overall this is fair enough. A bit of a disapointment, but drinkable with good balanced flavors.

Poured into a tulip. The color is black with slight amber hues. There is a giant head on this that makes pouring very difficult; retention is minimal.
The aroma is full of nice roasted notes.
The start of the taste starts out with mild cherry notes, but the finish is all cocoa and roasted barley. This actually strikes a nice balance between fruity and roasted flavors. While this isn't the most fantastic stout I've had, it strikes a nice balance.
This is light in body for the strength, with a nice velvety mouthfeel. This is very drinkable for the style. I can't give it a ringing endorsement, but I would enjoy it again.

750ml Bottle - thanks to lubiere for this
Appearance - Reddish/brown colour with with an average size fizzy beige head. I can't make out the amount of carbonation showing and there is some fair lacing. The head lasted for 3-4 minutes before it was gone.
Smell - Malts, chocolate, grains, vanilla, dark fruits
Taste & Mouth - There is an average amount of carbonation and I can taste malts, chocolate, and some roasted/smokey notes. There is also a bit of cherry/grape sweetness and some dry woody notes. It ends with a malty slight sweet aftertaste.
Overall - I preferred this to the bourbon version. The dark fruit flavours seemed to be quite prominent and added to the flavour quite nicely.

Bottle: Poured a dark burgundy color ale with a medium size foamy head with OK retention and light lacing. Aroma consists of molasses and other light residual sugar with subtle vinous notes. Taste is also a mix between some light tart notes with some subtle vinous notes with some molasses and residual sugar notes. Boyd is a bit light with medium carbonation and no apparent alcohol. A bit of a strange one with most stout characteristics gone and not enough cabernet notes to make a real difference.

750 mL bottle, batch 1, poured into a tulip
A- A dark brown/black with a two finger tan head
S- Roasted malts, hints of chocolate, some fruits, getting some wine from the barrel.
T- Roasted malts, some dark chocolate, darker fruits with a little tartness, slight wine flavor, some oak.
M- Medium body, tons of carbonation.
O- I have enjoyed the Saisons I had from Mystic a little more than this, but it is still good. I was hoping that the barrel would stand out more.

The pour is dark brown in color, almost black, with a big tan head. Strong aroma of oak and wine. The roast is also prominent and it’s slight acidic. A light fruity note, mostly berries and sort of non-descript red fruits. As with the aroma, lots of roast and wood on the palate. There is a slight charred character to it and overall it’s quite dry. A light acidity and the same light fruit quality. A little too thin in terms of the body.

750ml bottle into an Old Engine Oil snifter. Thanks to Hopstoopid120 for sharing.
A: Deep, clear brown body under a finger of ultra-fine tan head. Ok.
S: Very roasty and vinous, with strong tannins as well as dark chocolate and char. Ok, but a little underwhelming.
T: Starts out sweet and roasty, with only a hint of vanilla and tannic oak. Where's the wine?
M: Highly frothy, slightly prickly, and a little thin. Not great.
O: This was decent, but I really expected a lot more. Sorry to say my first experience with Mystic was less than stellar.

Pours a large fluffy/fizzy darker colored almost 2 finger head, that fades semi quickly at first, with the large bubbles popping throughout making it a swiss cheese like head, but slows a bit later. It doesn't leave much lacing though. The beer is practically pitch black, with the faintest hint of what should be light sneaking through the thin parts, but the light doesn't actually seem to make it through.
Nose is an interesting combination, part farmhouse saison, part dark ale, and hints of barrel. I'll start with the farmhouse saison, some rustic saison aromas, mostly yeast, with hints of spices and floral toasty malts, and an all around earthy farmhouse aroma. Then malts, a bit syrupy, with hints of molasses, nutty malts, and an earthy root extract like malt. then under all that is slight hints of barrel, light toasty oak and vanilla, but don't really get the cabernet yet.
Taste continues where aroma left off, first this one brings the malts. nice dark malts, toasty brown malts, hint of a much darker malt but not quite roasty, and slightest touch of cocoa butter. Again the earthy root extract like aroma touches the taste, and then more of the fluffy malt flavors and a hint of nougat. The some saison yeast flavors, but not a lot. Hints of spices and a bit of a rustic farmhouse earthy saison flavor, and a bit of bitterness in the back end. There is some barrel as well, a light toasted oak with a light vanilla rounding flavor. Then way in the back end brings a slight hint of vinous earthy dry red wine, but not a whole lot, just a nice touch. The loads of carbonation help to keep the palate clean as the various flavors swing back and forth. Finish is a bit drier but still slightly syrupy and sweet, lots of lingering earthy flavors with the saison, root extract, and slight hop flavor. Some lingering toasty brown malts as well.
Mouth is med to slightly fuller bodied, tons of carbonation.
Overall pretty good, a really intersing take on a "stout", saison yeast, nice earthy flavors, no roast/choc/black patent or any overly roasty bitter malt, and some nice barrel flavors, I would have expected a bit drier finish though if I had to find anything to complain about.

Big thanks to raveskdr for this one.
Pours a dark brown with a pretty substantial fluffy white head. Looks much lighter than your average stout. Aroma is certainly interesting, the wine barrel and the roasty/smokey base stout come together in an odd way. Flavor follows the nose, the smokiness of it really clashes with pretty much every other flavoer that this beer is trying to impart on us - there is wine and sweetness as well. Mouthfeel is a little too light and heavily carbonated for the style. Overall, this is an interesting idea, but doesn't quite come out as I'd hoped.

Thanks to Chris for sharing this beer.
The beer pours a nice dark brown color with some ample off white bubbly head, some decent lacing.
The aroma has classic American stout smells to it with some roasty notes, chocolate bar, some Lactose sugar too. Very clean and not very complex in the nose.
The taste isn't that much more complex though it has a nice dry wine note to it that's very apparent both in the flavor and in the feel. Lactose in the flavor once again. It still has a kind of non flavored component to the beer.
Overall I'm not thrilled by this whatsoever.

A-an almost black brown with a fingers worth of light tan head that leaves some lacing around the top
S-rich malts, dark fruits, warm molasses, and a light barrel aged smell
T-Has a warm bread like quality to it. Lightly roasted malt, molasses, dark fruit, chocolate, coffee, and a slight detection of red wine warmth
M-medium body, good carbonation, slight dry finish in the end
Overall there are many similarities between the Cabernet barrel aged version and the original version. The barrel aged version has a bit more body and complexity, a very good beer.

Purchased at Julio's a few weeks ago and shared with bpk59.
A - Poured into a standard pint glass a dark crystal clear mahogany with a one finger light head that fades to leave a slight cloud.
S - Aromas are somewhat sweet with maybe some dark fruits. There's light vinuos notes with barrel as well.
T - Taste slightly dark fruit and chocolate with nice essence of the cab. Good barrel notes with light booze as well. Stuff is quite tasty and really grows on you.
M - Impressive feel here. Sharper carbonation makes it nice and light in the mouth.
O - Overall this was a pretty good beer from mystic. Great dimension due to the cab barrel. Like this better than the regular edition.
