Paideia for the Greeks meant the development of the perfectly well-rounded citizen. This single-hopped pale ale uses Citra hops and a blend of malts to create a bright aroma and flavor with little bitterness. We think you’ll find our Paideia to be a perfectly well-rounded beer capturing the essence of the Greek ideal.

4 month old from can. Flavors and aromas are muted but it’s crisp in the finish. Very fizzy. If you want a clean crisp pale ale without much aromatics this will do.

12oz can purchased from the fridge as a single for $1.99. Canned on 9/8/2020, so this is almost 7 weeks old.

Look: Pours a nice deep golden color. It was very clear until the bottom of the can, which resulted in a soft haze with some tiny particulate floating in suspension and ultimately settling to the bottom of the glass. A very thin off-white head with good retention and lacing remained after an initially rocky head off the pour.

Smell: Lemon iced tea flavors with lemon zest and a crackery malt base underneath. Some perfumy notes also - picking up floral notes like rose petals. Smells like a balanced citra pale ale.

Taste: Up front, light and lemony with spritzy carbonation and some crackery malt. Then, the flavor profile finishes with a higher than expected bitter finish which lingers long and is quite nice and refreshing. The bitterness tastes a bit generic, almost tannic; it follows that theme of the "lemon iced tea" note present in the nose and on the palate. This beer is somewhat unique and somewhat typical at the same time. It's very refreshing and crushable.

Feel: Medium plus carbonation with a medium bodied mouthfeel.

Overall: My first St. Boniface beer. This beer almost comes across to me as an English bitter-inspired American Pale Ale, and I like what they did with it. Also impressive that this beer is only using citra hops, and it offers quite a bit of complexity. I wonder what blend of malts they used. I like it and think that it's a great session beer at just 5% ABV. Cheers!

I can't remember how I obtained this but it was probably via a gift or a trade. This was the first beer from St. Boniface that I had and for being an American Pale Ale, it wasn't bad. Not on the level of Sierra Nevada, this had a clean, crisp taste and a smooth slickness to it as it was about as easygoing a beer that I've had in quite some time!

Golden, nearly clear, and full of dark particles suspended in the liquid, this had a lot of head topping it off but that had to be because of it's age. Canned on 6/26/19, this didn't feel skunked but it took a bit longer to get around to than I would have liked! Lots of bread, grain, and tangy citrus in the nose as the taste was just as malty, tangy, and pithy as the aroma indicated. Some dry lime, cracker, and caramel stickiness in the aftertaste rounded things out as there was a lot going on here, with a lively carbonation keeping this fun from first sip to last.

The amount of alcohol was perfect as this was a true session beer that didn't lean too heavy towards fruit or hops, like so many other American Pale Ales that I've had. Lots of grain and orange pith lingered once I finished this off as this was a nice beer that I'd reach for again, had there been another can here...

Clear dark golden body with bubbly white head that dissipates. Aroma of lemon, citrus, mango, grass, pine. Tastes of mango, lemon, citrus, slight rind, grass, light bitterness and pine finishes. Light bodied.

The mostly clear dark golden amber colored beer pours out into a Duvel glass with a 1 1/2” fluffy, light ivory head that recedes slowly to a cap of foam and then to a thin irregular island of foam and a ring around the glass while leaving an open web of strings, large patches and skinny legs of lacing on the sides. Sipping creates a few strands and legs of lacing.

The aromas are filled with both a nice rich caramel and bready malt backbone along with lots of fruits from hops. The hops bring some lime, some light orange, some lycée and some mango to the show.

The flavors are much as expected from the nose with the rich bready caramel malt establishing a solid backbone and base that supports a range of fruity hop flavors that includes lime, orange, mango and lychee. The malt sweetness and some light citric zest bitterness are well balanced so that each is noticeably present but neither dominates the show or becomes unpleasant.

The mouthfeel is on the light side of medium bodied and fairly smooth with some very light carbonation. The nicely balanced finish begins as the malt flavors, the hop flavors and the sweetness all begin to fade away together to finally leave some light dry citric zest bitterness to close out the show in the back of the palate.

Overall I think this beer lives up to its name and the goals/intent of the brewer, i.e., the beer is a well-rounded and nicely balanced APA. While it’s probably not for everyone I personally find it enjoyable, drinkable and I’ll probably be having more, a lot more, of this one. (Note: this beer is fairly temperature sensitive in that when it is fresh from the fridge the bitterness does hide some of the malt flavors.)

L: dark maize color, massively thick and lasting head (probably my bad pour).
S: fresh cut grass, zesty citrusy hop aromas. Very enticing.
T: great hop-malt balance; bitter but not overly so.
F: perfectly carbonated, with some lingering hip bitterness. Very sessionable.

Poured 12oz can into snifter glass. 5% abv

Appearance- Orange with lofty head face to dissipate. Light haze with decent clarity.

Smell- Orange peel, grains.

Taste- Lightly toasted bread, crackery grain flavor. Orange forward citrus punch arrives next. Peeled orange. Turns sweet before a bitter hop blast. The citra hops this beer states it uses is ample. Ends in a bitter, citric finish.

Mouthfeel- Medium-light in body with active carbonation.

Overall- A solid pale ale showcasing fresh orange flavor and a bitter finish. Easy drinking.

I don't know nothing about this brewer or this beer.

Pours like a standard-issue APA: darkish yellow, medium haze, decent white head.

Smells more beer-like and less fruit juice-like than most recent citra APAs, and that's a good thing. Firm citra hops give off a citrusy aroma with node of grapefruit, and this is balanced very well against caramel and biscuit malt nodes.

It doesn't taste quite as good as it smells, but it's still very solid (and, thankfully, very beer-like). Citra up front, and modesty bitter middle, and then an end that's got some older school malt qualities, with nodes of peat and biscuit dough.
