Bottle (batch #16 2012) to fantome tulip
A: It is a reddish brown dark copper color with little no head but a medium lacing whitish brown in color. It has noticeable high carbonation and is dark to semi opaque but not too cloudy or clean either.
S: You can definitely tell it spent some time in barrels as the oak is fairly strong but in a good way. There are wine like dark fruit scents similar to red wine grapes or dark cherries. You can definitely tell its been naturally fermented but does not really have any funk on par a flanders though.
T: It is slight sweet and tart up front with a fruit juice flavor that is fairly complex it does have wine like aspects but it is sleigher. There are some sour hints but they are not nearly strong enough though it seems they could come out more with age. It is not necessarily a distinct flavor but overall it is very earthy, not like dirt or funk (as there is none of that) but spice wise the time in the barrels is noticeable here. Pretty solid overall would like to see how it develops
M: In terms of feel this is very juicy and smooth as it goes down very easy for 8%abv it is similar to watered down wine in terms of feel. The carbonation is nice, light and champagne like but not nearly as bubbly it matches the style though. The finish is crisp light and clean which adds to its drinkability.
O: Overall I like this beer its really solid to style with good flavors and easy to drink. That being said I defiantly want to see how it can develop with a few years on it as it was not very sour and a lot more juicy then tart. If it develops how I think it could it could make this beer a lot beer, but for now its good but tacking in some aspects especially in strength of taste though the feel is pretty good. I would recommend this is worth a try if you can get it.

From the bottle.
Appearance: Ruddy brown, barely any red on the edges, head is tiny and off-white.
Nose: Lots of sweetness compared to a traditional Flemish red. Almost honey-like note at first, followed by a good amount of ripe cherry. Oak is definitely there in the back with a toffee and vanilla undertone.
Taste: Very balanced and even but in the end it falls a bit flat. None of the flavors really pop. The honey is still there and plenty of cherry-tinged oak that finishes with a coca cola like syrupiness. Tartness is balanced by the extent of the oak presence here.
Mouthfeel: Not exciting and a bit flat.
Overall: A different take on a Flemish red. The tartness seems very toned down by the extensive oak aging (Cognac barrels probably are the root cause). Still a nice and easy sipper, but not nearly as complex and bold as other reds.

From a 750 ml (Batch 11, 2011) into a tulip.
A-The brew is walnut brown in color with only a slight hint of red. The head is one fat finger of light mocha colored foam that drops slowly into a thick ring. Even for a sour, this is not a terribly attractive beer. Lots of chunky, visible carbonation.
S-This thing has tons of oak on the nose. It also gives a fair dose of sweet cherries, some vanilla, a touch of sour grapes and vinegar. It is funkier and earthier (think horse blanket) than some Flanders Reds/Oud Bruins, but not quite geueze-like. Pretty complex.
T-The taste tracks the smell closely, which is good. The sour factor is medium with dry oak being more dominant than tart fruits. For fruit flavors, cherries are most noticeable, but there is also some tart pear and grape. The malts come through as well, with a sweet vinegar punch.
M-The feel is medium to slightly heavy for the style. Carbonation is lighter and the feel is appropriately slick.
O-This brew is a winner. I like the oaky, subtle complexity of it all. There are beers with more pucker power and this beer clearly does not try to hit you over the head with acid. Instead, this one really shines in the use of oak to give an dry, earthy, complex tartness. A complex and drinkable example of the style.

Enjoyed this at a little bottle share at Tree House Brewery. Reviewed from notes. This is a 20011 vintage, batch 14.
A - Poured into a Tree House glass a clear mahogany hue with a light, light quarter inch head that fades to leave thin, thin wisps.
S - Very, very nice for a Flanders, good sour tart vinegar notes. Light funk and oak.
T - Taste is more of the vinegar sourness with faint fun and light, light barrel notes. Incredibly balanced here.
M - Mouthfeel is solid for the style, not thin or watery but with enough carbonation to keep it up off the tongue.
O - Overall this was a darn good Flanders red, which I was expecting it to be. Always see this in stores, glad I got to try it.

January 2010 bottle. Reviewed in May 2010
LCBO Spring release. After checking inventory at one location (they had 60) I showed up and was told they all got transferred to another store for a customer. I think I have an idea who cleared it out!
A: Kind of a rosey brown body with champagne like wispy head. Not much lacing going on, but the beer is quite a nice shade.
S: Quite barnyardy. More so than I expected from this Italian brewer. Soft fruits are present as well. peach and apricot.
T: Quite sour, but very earthy in the finish. A mushroom and almond taste enters the palate as you swallow. Cherries, apricot and other fruits are present as well.
M: A very lively beer. Very dry, astringent. Perfect for the style.
D: A great one to reflect on. 8% beer, but Alcohol is well hidden.
Re-Review, Feb 10, 2013
This bottle is now 3 years old, and it's unclear how much time has affected it. I opened a bottle at Christmas and declared that it was in decline; Drinking this now has raised questions on weather that is true, since it seems to still be drinking very well. I think I'll try drinking a fresh bottle to "right my compass" on this one before I open my last bottles.
I've increased my "overall" score by .25 to reflect what I feel is more accurate.

2012... Batch #15, bottle #3159.
A - Pours a deep cranberry or plum in color with a 2 finger eggshell head.
S - Very funky and musty with oak laced throughout and darts of tartness peaking through.
T - Faint earthiness and oak to start that develops into tart cherries. Midway through the sour dies down to find a dry maltness then a puckering ending. As it warms the earth really comes through more in the beginning and end. Meanwhile the sour dies down to a tartness or may'be I'm just getting used to it.
M - High carbonation, light body, effervescent.
O - Not as sour as some other beers in the category I've had. It's still well done and definitely delivers that lip puckering goodness that I sometimes crave.

A good sized head atop a clear dark reddish brown fluid. Some nice lacing and a light covering. Smell is vinegar and and oak with a healthy funk and and light fruit component. Some oaked alcohol with faint vanilla lightly showing. Taste is vinegar and malt sweetness. Oak and cherries that really come into balance as they warm. Vanilla and cherries with a grape blend. Dry woody finish that leaves a tart sourness lingering. Juiciness leaves the mouth dripping with saliva, Nice dry feel with a good carbonation that gives a velvety drinkability. A good solid Flanders Red with a complex construction.

A huge, frothy, beige head is long lasting, leaving thick patches of lace on a flute glass while cloudy, reddish-brown beer sparkles with clinging carbonation.
Tart cherry with unripened apple against a background of rustic oak. Some alcohol comes out with warmth.
Tartness carries from entry to finish. Cherry leads the fruity profile while wood notes provide a base note. Sweet and tart, yet well balanced. Warmth brings out notes of merlot in the long finish. Some apple cider can also be detected. This one warms quite well but lacks layers of progression.
A light body with the texture of satin. Carbonation is light and prickly while alcohol is well below expectations.
This is an easy beer for a late Friday night. It is refreshing and relaxing and would go well with reading or after a heavy meal.
