The blend for 2015 Vernal Dichotomous contains old beer brewed in November 2012 with Hill Country well water, barley, wheat, hops, rosemary, lavender, and spearmint, and young beer brewed in March 2015 with Hill Country well water, barley, spelt, and hops. Both the old and young beer was fermented with a mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery. As mentioned, the young beer was refermented with kumquats. 2015 Vernal Dichotomous was blended shortly before packaging on April 20, 2015. It is 100% naturally conditioned in bottles, kegs, and casks. 2015 Vernal Dichotomous is unfiltered, unpasteurized, 5.4 percent alcohol by volume, 20 IBU, 3.95 pH at the time of packaging, and has a finishing gravity of 1.001 (0.3 degree Plato).

Poured from a bottle on the weekend of release into a Jester King 16oz Tulip.
Appearance: Looks very much like their other saisons, a honey golden brew with a small and persistent head.
Smell: Funk and a faint skunky quality lead, followed by a strong and floral herbal element. Perhaps a light citrus note.
Taste: The herbs come up front first, the citrus and a surprisingly strong malt character. Kumquat isn't as strong as it might be if this was a provenance variant, but still noticeable. I remember it being stronger last night on draft. The malt is crackery and lingers a while.
Mouthfeel: Nice prickly carb, this was a lot flatter on draft than it is from the bottle. Linger is long, relatively thin and refreshing.
Overall: The Dichotomous series continues to impress, this is easily among the best of them.

Hazy bright golden body and a starch white head.
Hugely herbal nose with a fruity edge. Rosemary, lavender, spearmint and the kumquats add some nice character.
Light and bubbly on the tongue. Begins with the herbal punch. Ends fruity with kumquat and citrus.
