Brewed with cubeb peppercorns, anise seed, lemon zest, and lemon juice, Coquetier is inspired by the woody, herbal, floral, and citrus character of the traditional New Orleans cocktail Sazerac. Lemon zest recalls the cocktail’s traditional garnish, a thin sliver of lemon peel resting on the rim of the glass. The beer was aged in French brandy barrels, as the cocktail originally called for Cognac brandy.

Coquetier was brewed in April of 2014 with Hill Country well water, barley, rye, hops, cubeb peppercorns, anise seed, lemon zest, and lemon juice. It was initially fermented in stainless steel with a mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in the Texas Hill Country. It then spent seven months continuing to slowly ferment and mature in 600 liter French brandy barrels. It was then refermented in bottles, kegs, and casks for another three months prior to release. Coquetier is 7.5% alcohol by volume, has a finishing gravity of 1.005 (1 degree Plato), and was 11 IBU and 3.2 pH at the time of bottling. The label art was created by our in-house artist Josh Cockrell. Finally, the French brandy barrels, after first being used by us to impart spirit character into Coquetier, are now in our barrel room as neutral oak vessels containing 100% spontaneously fermented beer.

Dark orange, almost bronze, opaque, with an off-white bubbly ring and slight lace.

There's that nutty smell again. It's becoming apparent that under certain conditions the house culture at Jester King really strongly wants to develop these attributes when it can. I'm also getting some blue cheese and woodiness.

Taste is acetic and oaky, with green olive, brandy, and tons of lemon being repeatedly pounded down by the culture. Very sour!!!

Finish is semi-dry.

750 ml bottle into singature tulip glass; Blend #1, bottled 1/27/2015. Pours lightly hazy golden orange color with a 1-2 finger dense and rocky off white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big tart/sour lemon, lime, green apple, pear, orange, berry, peach, white wine, peppercorn, anise seed, hay, straw, floral, leather, oak, musty funk, cracker, bread, light white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and compexity of fruity/funky/acidic yeast, spices, brandy barrel, and light-moderate pale malt notes; with great strength. Taste of big tart/sour lemon, lime, green apple, pear, orange, berry, peach, white wine, peppercorn, anise seed, hay, straw, floral, leather, oak, musty funk, cracker, bread, light white vinegar, and yeast/oak earthiness. Good amount of fruity/acidic sourness and yeast spiciness on the finish; with lingering notes of sour lemon, lime, green apple, pear, orange, berry, peach, white wine, peppercorn, hay, straw, leather, musty funk, light white vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/acidic yeast, spices, brandy barrel, and light-moderate pale malt flavors; with a great malt/spur/spiciness balance, and no astringent flavors after the finish. Good dryness from sour/spiciness as well. Medium carbonation and light-medium body; with a very smooth, acidic, and lightly grainy mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an outstanding sour saison! All around awesome complexity, robustness, and balance of fruity/funky/acidic yeast, spices, brandy barrel, and light-moderate pale malt flavors; very smooth and easy to drink, even with the elevated acidity. A highly enjoyable offering.
