Our first unfiltered offering, Summer Swelter Ale is the perfect warm weather beer! Summer Swelter Ale is light and refreshing while still keeping your taste buds interested. The malt base features a hefty dose of wheat for a big, fluffy head and a soft, round body, yet keeps the beer drinkable even during the dog days. The light malt character is more than balanced by a blend of citrusy American hops, giving Swelter a crisp bitterness without being overpowering. The hoppy citrus aroma complements the ingredients that make this beer so unique: lemon and lime peel, Kaffir lime leaves, and lemongrass provide an subtle yet unmistakeable floral nose and just a touch of bracing tartness, taking the refreshment of Swelter to the next level.

a - poured a three-fingers thick bubbly, fluffy and off-white head into a pint glass that left good lacing and sheeting throughout. the body was a slightly hazy straw gold color.
s - lemongrass and lime dominate with some grassy hops underneath.
t - grassy hops, lemongrass with a hint of breadiness.
m - crisp bite.
o - really solid session beer for the summer in a can.

This was a decent offering and my first beer from Baxter. I had it on tap at the Tip Tap Room. It was surprisingly clear for an unfiltered offering. The golden color was still nice, with a big frothy head. The tartness of the citrus was a bit much...almost to the point of being sour. Not bad overall.

Served on-tap at The Tip Tap Room in Boston, MA
A: Pours a hazy medium yellow in color with moderate to heavy amounts of visible carbonation and some golden yellow highlights. The beer has a finger tall fluffy white head that reduces to a couple of small thin patches, a very thin film covering the majority of the remainder of the surface of the beer, and a medium thick ring at the edges of the glass. Moderate amounts of lacing are observed.
S: Light to moderate aromas of wheat and cereal grain malts along with moderate aromas of citrus/lemon hops.
T: Upfront there are light to moderate flavors of wheat and cereal grain malts that have just a touch of sweetness. Light to moderate flavors of citrus/lemon/lime hops and just a hint of grassy hops. Light to moderate amounts of bitterness that fades after a short while.
M: Light bodied with moderate amounts of carbonation.
O: An interesting take on a summer beer, this one is not quite a light/thin as the others in that style...maybe that is a reflection of the slightly more temperate summers they experience in Maine. Low in ABV but not the easiest to drink and not sure I would call it sessionable.

From 08/17/12 notes. Bought a can of this at the Publick House in Boston, MA. Poured into a pint glass.
a - Pours a hazy medium yellow color with one finger of fluffy bright white head and moderate carbonation evident.
s - Smells of bready malts, wheat, grains, light lemon, and light citrus. Not bad at all but lots of bread and not much lemon or lime; just a little weak.
t - Tastes of bready malts, grains, wheat, citrus hops, floral hops, fruity malts, lemon, and lime. Definitely a step up from the nose and a lot more going on here. This is pretty much what I was looking for.
m - Medium body and moderate carbonation. Body is pretty smooth.
o - Overall a pretty nice low ABV summer beer. Brewed with lemongrass and lime, they don't come through a lot in the nose but do in the taste. A nice crisp beer worth checking out.

Small head for wheat. Leaves some streaky lace. Surprisingly clear. Golden color.
Perfume smell of fresh picked flowers. Lavender? Light hop smell at the end. NO wheat to the nose. Complexly flavored.
More lavender on the tongue. Lightly sweet, but the finish is very dry with a peppery hop kick. More bitter than expected. The body is as expected with an elevated carbonation level.

Canned on 6/19/12.
A: Bright golden-yellow with lots of sediment floating around. A big, puffy, white head fades quickly into no lace or retention.
S: Big burst of hops and citrus from the initial pour. Some lightly roasted malt and wheat in there, as well.
T: Citrusy, hoppy, and malty. Well-balanced. All the stated ingredients are there. The kaffir lime leaves stand out, bringing a chalky, earthy, unique taste and feel to the beer. You can taste the wheat, too.
M: Refreshing, citrusy, and highly drinkable. In my opinion, more enjoyable cold as opposed to warm, where some flavors become cloying.
O: Another great beer from Baxter. Had this on-tap in Bar Harbor, as well, and it's just as good.

A: Pours a cloudy/hazy straw yellow color with a fingers worth of bubbly head that retains well
S: Very fragrant, with notes of lemon and lime. Almost like a lemon cream pie. Very summery
T: Follows the nose, with a bitterness throughout. Definitely get the lemon and lime peel, along with the lemongrass. Not too sure what kaffir lime leaves really impart in terms of taste, but I'm sure they're in there too. Don't really get a lot of flavor from the hops, but they certainly go into bittering this beer
M: Light bodied with moderate carbonation. Bitter and dry. Slightly chalky
O: I think I'd like this more (don't get me wrong, I do like it) if it weren't so bitter throughout. It makes it a bit more difficult to really session, but it is possible to get around it. It is a summer ale, after all

Baxter Celsius Summer Ale

Pours a hazy pale gold with a small frothy head. Average retention and lacing, though the color has a nice glow to it.
Aroma has a distinctive lime component, along with an earthy and lemony spice character. Pretty nice, actually.
Flavor is surprisingly bitter at first. Kind of a raw, citrus rind thing. This gives way to a hay-like, malt flavor that lingers over the dry finish. Not getting much tartness. The more I smell and drink this beer, the more I am reminded of key lime pie. It's a pleasant association, but not what I necessarily want in a beer. As the drink wears on, the bitterness seems a bit much for a mass-appeal summer beer-- did they not factor in the contributions of the spices and herbs? Mouthfeel is light and drying with medium carbonation.
This is the first Baxter beer I've actually thought to be well-executed. It is refreshing and free of defects, an as-advertised summer ale. Alas, it still does not do a whole lot for me personally.
