Pours a very nice looking dubbel. A dark brown muddled look with a dark tan color when held to the light. A lot of carbonation creates a tan head with great retention.
Smell is very clean. A bit of Belgian sugars and a nice molasses type smell too.
Taste is very clean as well. Belgian sugars are more subdued than I am used to. Nice taste to this though and a nice hoppy taste for a Belgian.
Mouthfeel is very nice. A good smoothness along with a slight crispness in the carbonation that makes this a very refreshing Belgian.
Drinkability is very nice for a Belgian. Not all the great tastes or alcohol vapors I am used to in a Belgian, but more sessionable. Not the best tasting, but a very nice Belgian.

750 ml bottle into chalice, bottled on 2/25/2012. Pours very hazy reddish brown color with a nice 1-2 finger fairly dense light khaki head with great retention, that reduces to a nice cap that lingers. Some good spotty lacing on the glass, wit ha fair amount of carbonation streaming up. Aromas of cherry, raisin, pear, apple, molasses, pepper, clove, herbal, earth, dark candi sugar, toast, biscuit, and yeast spices. Very nice and well balanced aromas with good strength and complexity. Taste of big raisin, pear, apple, molasses, dark candi sugar, pepper, clove, herbal, earth, toast, and yeast spices. Lightly tart yeast esters on the finish; with lingering notes of light fruits, molasses, herbal, dark candi sugar, pepper, clove, earth, toast, and yeast spices on the finish for a good bit. Great balance of flavors with good complexity, and no cloying sweetness. Medium carbonation and body; with a fairly slick and slightly prickly mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after this finish. Overall this is an excellent dubbel. Great flavor complexity and balance; and very smooth to sip on. Very well done and highly enjoyable.

A: clear, brownish-copper color, poured with a good tan head that dissipated to spotty veil
S: medium nose, roasted malt, candi sugar, a bit cloying
T: full bodied, roasted malt with good candi sugar hints, yeasty traditional Belgium dubbel, sweeter, roasted plum taste hinted in finish
M: full bodied, well-balanced, traditional, lively, shied away from being overly cloying

Subtlety reigns supreme on this beer. I first had this at the brewery and loved it. On the nose I get those classic Dubbel notes of big dark fruits: raisin, currants, plum, and fig.

Rockmill's Dubbel pours out a slightly hazy dark dark amber (I wouldn't call it brown). No head to speak of, as well as no visible carbonation. Lacing is nonexistent, but it could be due to the fact that I just rinsed these glasses before use.

Flavors are amazing! All those dark fruits come back from the aroma and dominate the flavor just as well as they did on the nose. These plums, raisins, and figs are even more prominent on the palate as well, boasting big flavor from first sip well through the finish. Just a slight amount of alcohol on the back-end of the beer brings it to a close.

Just like the Cask Aged Tripel, Rockmill's Dubbel is lightly carbonated and has a body that is more on the robust side. Again, it's strange for a Belgian beer but it works quite well. I find I can taste the beer better without getting that signature carbonation bite.

Overall I really really like this beer, in fact, I love it. BA's rating system probably won't show it, but I really love this beer. It's super drinkable, but defiantly not a session beer. I just wish it was available within driving distance to me.

Poured from a 750 ml bottle with a sticker indicating it is from batch #145, brewed 9-18-11, bottled 10-21-11. Served in a belgian-style chalice/goblet. The cork was exceptionally difficult to pull out, to the point where I almost resorted to a bottle opener. This inspires definite confidence in the integrity of the ale inside.

Pours a muddy garnet color, cloudy with ruddy highlights and a 1/2" off-white frothy head that slowly reduces.

Has plenty of berry fruit aromas, including strawberry and raspberry, honey, and creamy malt. Smells clean and fresh, with hints of mild acidity.

Has a grassy, earthy taste to it, with punky yeast, dandelion greens and floral sweet combining up front, before a slightly tart and acidic finish kicks in. Taste is much lighter than one would expect with an 8% alcohol ABV.

Medium bodied, with soft, bubbly feel that gives way to a dry tart finish. Not sour, to be sure, but definitely on the tarter side.

A decent brew, and certainly the first I've had from Lancaster Ohio. I bought this at a specialy alcohol shop in Columbus for $22, and while I'm enjoying this ale, it is not a $22 bottle of beer. I've since seen it for much less in the Cleveland area ($14-$16), which I think is more reasonable, particularly if obtaining a fully organic ale is important to you (this one is certified by both the USDA and the OEFFA).

I sent one of these out in a trade and figured I should try one as well so here it goes.

750ml bottle from batch #120 bottled on 8-17-11 - poured into a New Belgium Globe glass

Pours a nice dark amber with reddish hue to it with a two finger thick head which fades slowly. The smell was sweet and a bit malty with a slightly yeasty component, a touch of cherry as well. The flavor was very strong of cherry with some pleasant malts, but seemed very strong on the fruitiness. This beer was nicely carbonated with a full and creamy mouthfeel leaving the flavors lingering for a long time.

Overall I really enjoyed this beer and would definitely get it again. I will also be picking up the Tripel and Saison before too long. It may be a little bit pricey but for a vary small brewery that is certified organic I think it is definitely worth the couple bucks to support them.

Pours a brown with reddish hues. Light pillowy head that yields to a nice lace.

Nose has plenty of Belgian character with caramel and plenty of dark candied fruits.

Medium body with plenty of carbonation. Loads of character from raisins, figs, currants and prunes to finish it off. The candied sugars come through and really give this a candy feel throughout. Not too sweet but pushing the edge. Quite dry in the finish with a lingering fruit character on the tongue.

I am really not too sure what to make of this. Overall I felt like this was drinkable but not my favorite dubbel out there. The price was fairly high at $15 per bottle. I will have to try out the other styles to see how I feel about the brewery overall.

fingers definitely crossed

A- pours a mostly clear reddish brown which turns to bright ruby red when held up to incandescent light. tan foam is light and airy and settles quickly to a loose disk leaving no lace behind.

S- sweet, fruity and yeasty. fig, date, banana, plum, raisin, cookies, chocolate, clove, nutmeg, brown sugary malt, sandalwood, and some berry like tartness. very nice.

T- same odd bitterness as in the wit and the saison. what kind of hops are they using? is it from the yeast or something? dude, i gotta say i don't like it. i still have a bottle of the tripel yet to try and i think i'll cellar it for a few years. some spicy yeast flavors remain behind but nearly every trace of malt flavor is wiped away by this acrid bitterness. again, very disappointed.

MF- nice body with carbonation that expands on the palate giving it a larger than life creamy feel.

D- i now officially feel that i wasted $60 on these four bottles from rockmill. something needs to be done with this weird bitterness.

750ml corked and caged bottle. By far the most difficult cork that I've ever dealt with. That thing was in there pretty good...

A- Pours a nice cola brown color with a thick slightly off white head that leaves good lacing.

S- Very sweet caramel malt aromas with some spice and lots of dark fruit scents as well. Belgian yeast and toasted bread.

T- Dark and light fruits lead the way initially with very strong notes of banana and raisins. Caramel, figs, tobacco, and some brown sugar round out the flavors. The yeast plays a major role in the flavor here and adds some delicate spices and complexity. Alcohol is very well hidden.

M- Even with the spritzy carbonation the mouthfeel is actually much fuller than I was expecting. Smooth and creamy with a very nice lingering sweetness.

O- This is my first of the Rockmill brews but I must say that I am impressed. I'll definitely be heading back to the store to pick up the others.

Presentation: Had at Shaw's restaurant with a great friend. We slowly worked ourselves through 3 of the 4 Rockmill beers. Poured from 750ml bottle into Rockmill logoed glass.

Appearance: Pours with half finger light tan head that sticks around for the remainder of the glass. Great lacing. Beer is mahogany with some sediment in the last pour.

Smell: Raisins and dark sugar; hints of molasses.

Taste: Earthy grains with undertones of dark fruits and coffee. Mild hop bitterness in the finish with slightest of ginger. Lingers with slight metallic bite.

Mouthfeel: Massive carbonation, as I expect. Great body!

Drinkability: This, like every other Rockmill beer, is awesome. My go to beer.

Served from the bottle into a snifter at the Greenhouse Tavern

A- Poured a murky brown off-white head that left no lace

S- Molasses and alcohol

T- Raisin, brown sugar, molasses, caramel, and vinous quality. Some alcohol coming through. Really nice, complex flavor

M- Chewy, little syrupy, fuller bodied, not much carbonation, some alcohol came through in the taste and some warming

O- Very drinkable and complex tasting dubbel.
