Notes:
A beer for the ladies, crazies and connoisseurs. A floral, hoppy and fruity French-style saison. Saisons are completely undescribable so we won't even try. Our interpretation has five types of grain, Lavery Estate hops and three different strains of yeast! The yeast is the star of this show - fruity, spicy, fragrant, alluring and simply delicious. This beer ends dry and crisp and bottled conditioned with Brettanomyces Clausenii, a wild yeast that adds fruity, tart and mildly funky aromas and flavors to ale. This beer is great young but will change considerably with time.
Named Liopard oir, Irish for 'gold leopard', which appears on the Lavery Family crest.

Huge thick frothy foamy white head floats on top of the glass on top of a super cloudy dull straw color.
Smell is loaded with peppery yeast esters, an odd touch of clove/banana, and a dry grassiness I normally associate with Brett. The Brett smell reminds me of Brux.
Complex taste for a saison. Initially sweet, which I think really helps the rest of the beer. Strong peppery yeast (almost has some heat to it). Slight bit of coriander, and oddly a touch of nutmeg. The Brett is so dry, its almost bitter. Odd coming from a Brett beer. I think thats the hops, but I get no dry hop notes whatsoever.
Finishes clean, with that light slippery sweetness coating your mouth late. Light bitterness gives way to one last flash from the peppery yeast.
Very well done, and I bet with some age the Brett will shine even more.

I have tried many beers and many saisons. American brewers have a very difficult time creating saisons like those from Belgium. The balance on this beer is phenomenal. There are equal parts of funky and earthy, and it does not cross the line. This reminds me of Dupont and Fantome. It is beers like this that are defining the craft beer movement of America.

A: Pours a golden yellow with a hugh amount (2 full fingers) of cloud white head. The lacing on my glass is amazing the entire drinking session.
Ar: Peppery, funky, with some crisp hop notes.
T: Wow! This is an amazing farmhouse beer. Crisp, citrus hops, Funky brett notes with kind of a grassy flavor. Really complex for the style. Nice mix of grains and funk topped off by hops.
M: Light and crisp with moderate carbonation.
Overall: An great farmhouse/Saison beer. This is one that I usually compare other beers of the same style to. I can say that I will have a few of these in my celler and can't wait for this to gain even more funk over time.

Thanks to yourefragile for sharing. Served in a cervoise. Pours a moderate grain color with a short white head. The nose has an add aroma of bread yeast alongside a touch of spice and fruit. Flavor is a bit fruity with a touch of spice, but also has a pronounced character of instant-rise bread yeast. Medium body; dry. Didn’t get too much out of this one, and certainly nothing from the Brett.
