750ml bottle poured into a Duvel tulip.

A: Pours a red-amber color with great clarity. Four fingers worth of rocky white head makes itself a permanent fixture. A thick blanket of lacing coats the whole glass. An impressive beer to behold.

S: Yeast driven aroma, as would would expect of the style. Very peppery, hit of clove and garden herbs. Musty and rustic. Hint of tartness. Fruity scent of apricot and peach. Doughy and nutty malts with a slight toasty and bready impression.

T: Pleasing tartness greets the tongue first. Pear, peach, apricot, and green apple skin. Musty and funky, though not as much as the nose would lead you to believe. Rustic and dusty, like an old book smells. Bready and toasty malt tastes far in the background. Hit of clove. Black pepper toward the finish. Tartness fades and musty and nutty yeast rides it out into the finish.

M: Medium bodied. Light but sharp effervescence. Somewhat creamy, though it does feel overly foamy in the mouth.

O: A pleasant surprise. Sankt Hans shows a good balance of refreshing tartness and rustic barnyard character. You don't often come across a saison like this brewed on American soil. In fact, I can't say that I ever have. An easy drinking, refreshing summer quencher and a complex thinking man's beer rolled into one.

750ml, August 2012
Hill Farmstead wine glass

A: Pours almost clear light amber orange color. Nice carbonation. Good cap of full finger white fluffy head. Leaves some sticky lacing sheeting.

S: Nice barnyard funk on the nose. Getting some peppery spice notes as well. Grassy hops. Grainy malts.

T: Nice peppery spice on the tip of the tongue. Meshes nicely in the mid palate with the barnyard funky flavors. It's actually mildly sour, which is very nice. Finish is dry and crisp and refreshing. Not bone dry like lambic or anything.

M: It's medium bodied but drinks lighter because of the good carbonation.

Hazy rusty orange with a tall white head, leaving a thin layer of carbonation after it dissipates.

The smell is funky yeast, pumpkin spice, and a slight metallic smell.

The taste is tart, pumpkin spice (I keep picking this up and was not expecting it,) lemon, and yeasty.

Mouthfeel is heavily carbonated, dry, and tart.

I've only had a couple but really dig the saisons that come out of HF.

750ml bottle poured into a 2013 Raleigh Beer Tasting snifter

A~ dark burnt orange with lots of head and nice lacing

S~ lots of yeast, herbs, and Belgium. (yes it tastes like the country lol)

T~ here's where it really opens up, light tartness, lots of pepper, citrus, apples, pears, you name some flavor in a saison its probably got it! funk and yeast on the finish.

M~ lots of carbonation, little bit creamy and goes down smooth leaving you with the tartness all the way through.

O~ very good, what i would call a Belgium saison, definitely would drink again but would prefer a stand alone HF saison. still working my way through their saisons/wilds and hope to try them all (hahah yeah ok...)

750 mL bottle.

Pours a mostly clear, reddish brown with a massive, retentive creamy white head. Earthy and spicy with bready malt, fruity sweetness and citrus rind, grassy, mildly funky, and some dry pepper in the finish. Medium, dry and clean body, crisp finish.

A: Pours a hazy golden amber in color with some orange highlights and moderate amounts of visible carbonation. The beer has a three finger tall foamy light beige head that slowly reduces to thick medium sized cap in the center with a thin ring at the edges of the glass. Significant amounts of lacing are observed.

S: Overall the aroma of this beer is pretty yeasty - moderate aromas of peppery spices and some grassy barnyard funk. There is also a lighter aroma of some tart fruits including apple, apricot, and lemon/citrus.

T: Light amounts of grassy barnyard funk/hay with some light amounts of grainy malt and peppery/spicy yeast. Light to moderate flavors of tart fruits - apple, apricot, and lemon/citrus.

M: On the lighter side of medium bodied with moderate to heavy amounts of carbonation. Slight amounts of acidic prickliness. Light amounts of dryness in the finish.

O: This is a very interesting and tasty brew - one I definitely would have again. I enjoy the light funkiness and I found this one pretty easy to drink.
