For a variety of reasons I've wanted to try this beer. I love Hill Farmstead and Grassroots is sister brand. This is a collaboration with Tired Hands, which will be opening down the road from me soon.
The beer pours a very light cloudy golden color with a fluffy white head. The smell is of typical saison yeast with a hint of brett and a huge dose of spices. The flavor is similar and dry, though the spices are more prominent and overshadow the brett. Some lemon and orange citrus linger in the background as well along with a medicinal quality. The mouthfeel is light and nicely carbonated. This is a pretty good saison. Certainly different. Not an everyday drinker, but good nonetheless.

12oz bottle poured into a Dogfish snifter
A~ hazy glowing orange with a crazy thick head. it almost looks like an ice cream float.
S~ very floral, peppercorn, bready yeast, and slightly tart.
T~ whoa! lots of hibiscus right up front. peppercorn, passion fruit, pineapple follow closely. finishes off with a nice tartness from the brett.
M~ very carbonated, smooth, and all around refreshing!
O~ i always love an amazing saison and this is right up there with some of the best HF's. if you really enjoy floral beers and teas like i do you will love this! it also reminds me of Fantome Saison but with hibiscus rather than jasmine and replace the smokeyness of the Fantome with brett. mmm...! how could you beat that!

A - Hazy golden-orange with a big finger of frothy white head. Fades very slowly.
S - Sweet grainy and coriander and other spices, Belgian yeast, funky Brett, barnyard smells, lemon zest, honey.
T - Sweet grainy malts with lemon zest, citrus hops, coriander and other spices, Belgian yeast, funky Brett, tart green fruits, honey.
M - Medium bodied with moderate-plus carbonation. Smooth with a dry, tart, and estery finish.
D - Nice funky Saison, Great Brett character and nice balance.

Bottle shared by Thorpe429, thanks, a long time want really glad I got to try this. This beer is pretty overcarbonated and since it is stored in the standard 12 ounce bottles I think people should be drinking them now lest they have a bottle bomb on their hands in the future. I enjoyed the brett and fruit character of this beer a lot and would definitely have it again.
Beer is yellow and mostly clear with a big white head, aggressive carbonation, lots of retention but minimal lacing.
Aroma is fruity, sweet, very yeasty / bretty.
Beer is light in body, effervescent and the Brett comes through very strongly. It is a nice beer, reminiscent of Rayon Vert or beers of the like, nice finish, dry beer overall. I'd have this again if it were made again for sure.

12 oz bottle poured into a tulip
This was a bit of a gusher, but my cat-like reflexes enabled the gush to go in a glass and not a drop was lost
Once the pour settled - this was a beautiful hazy golden straw color with a fairly substantial head that left a good bit of lacing on the glass
Smells of tart barnyard funk and a bit of fruit and spice.
This is a tasty saison that has its fair share of bretty funk along with some nice subtle floral and almost lemony apple taste to it. The peppercorn leaves a striking note in the aftertaste along with an almost astringent cherry medicinal flavor that lingers for a bit (think Ludens cough drops). A fairly complex and interesting flavor profile that really left me wanting more to try and figure it all out.
After the initial onslaught of gush, this was a nicely carbonated beer with a light body
Overall this was a very good saison with some great complexity and I wish it were more readily available. Definitely try it if you get a chance.
