Winter 11 is made with the extract of the chicory root. This brings back memories of my childhood, growing up in Kampenhout, the heart of the chicory growing region in Belgium. Winter 11 is brewed strictly via traditional methods. The grain and bitteringhops are produced on the Dormaal farm. Cheers!

Poured from 12,7 ounce bottle into a holiday tumbler. Light caramel color, with a couple of fimgers of white head that settled rather rapidly to a thin ring leaving no lacing. The age seems to have mellowed this quite a bit. There is a noticeable absence of funk on the nose and palate, and any chicory that might have been present has faded. Still, a pretty good beer after all these years. Light caramel on the nose and palate, with slight overtones of tart apple. Medium bodied, on the sweet side, and a rather sticky finish with a lot of lingering fruity tartness. Plenty of alcohol warmth that really asserts itself at just above cellar temperature. Would like to have tried this closer to the bottling date. That's life, I guess.

2011 Vintage, possibly a bit beyond expiration date, couldn't quite read the label.

It's got an extremely rich looking pour. It's very thick and teems with stuff floating around, almost looks like dirty river water. The head is not quite bright white, but fairly white. Only a finger thick, there's nice retention and a spotty lace.

Smells funky and tart. Lots of different fruit scents going on. Kind of a musty, dank, overripe dark fruitiness. Clearly has the farmhouse smell. As it starts to warm, the alcohol becomes more prevalent in the nose.

The alcohol is not overpowering to the taste buds, but it's very present. Lots of dark, ripe fruits...figs and raisins and plums and cold weather fruits like that. I have no idea what chicory looks, smells or tastes like, so I can't really comment on that. The taste is nice and fruity with a pop of alcohol and just enough hops to keep the sweetness at bay.

Tastes like a Belgian Saison should taste, only with a substantial note of heat from the alcohol. Slightly sweet with a blast of tangy and tart. Medium bodied, crisp and mostly dry finish.

Overall, it's a nice rendition of the style. I've got a bottle of 2012 Vintage that I'm really looking forward to. Goes down pretty easy and has nice alcohol, letting you know it's a beer.

Snagged a 2011 vintage for 2 bucks. Expired October 2012

A - Another hazy colored peach amber brown. Also a nice bit of carbonation despite the 1+ year of age with sticky lacing throughout. Mild touch of sediment made its way into my glass.

S - Sour dough bread, mild funk and brett. Fruity yeasts and some hops.

T - A touch sour with a sour dough bready pretzel taste mixed with a touch of tart lemon and funky fruitiness. I guess its a touch skunked since it has a cloying sour yeast flavor but it's not terrible enough to pour out.

M - Light to medium not as bubbly as the white gold but still plenty carbonated.

Overall another beer this one seems to have a touch more flavor and funk. Still I don't think I would pick up another bottle even for 2 bucks...

Poured from the bottle into a tulip glass. Winter 12.

A light golden amber brown, hints at orange hues through an opaque body. Super slow creeping carbonation, with fine white bubbles coming up, matching a light classic white somewhat rocky, but a bit shampoo foamy head. That foam sticks around though. A solid and impressive looking brew.

Nose hints just a little floral, but a good amount of thick brett. Airy and crispy sensations hit in the bouquet. Real solid and good.

First palate quench hits with a sourdough like malt sweet crust of bread mixing with the brett like mild funky character. Sweet malts follow, even some toasty action. Light floral action, and an almost popcorn like taste. A sense of real dry grain and crackly husk. Mouthfeel has lots of body to carry a great mild sweetness.

A real nice wonderful saison that is truly hitting the notes just right, but has lots of distinct character. This is great.

A-hazy orange gold with a nice thick and foamy white head

S-smells awesome actually. good funky and spicy wheats. i was afraid it was going to smell sour in a spoiled way rather than a funky way, but no its smelling quite good. some green apples. some chlorine.

T-comes in with a very mellow and smooth flavor of slightly tart grains and apple and belgian pale spices. becomes somewhat watery, but there's a bitterness and sourness that sticks to the tongue. a very subtle beer. the back end has a lot of pale belgian ale to it. its good.

M-good high carbonation, but unfortunately with a fairly watery finish

O-if you told me this beer was 4%, i wouldn't doubt it for a second. it isn't a bad saison, though somewhat boring. its definitely very fun to drink though. its not unique really. it might be worth a try if you're in to trying new saisons. every sip leaves you pleased.

Poured into my large Gulden Draak tulip, Winter 12 is murky dull, burnt gold with a huge off-white head with big bubbles leaving tuns of sticky, clingy foam.

Smell is floral - I didn't realize it had roses until I read the label, but now it seems obvious. However, they're nicely integrated with the fruity saison esters, and not suffering from the potpourii taste that some flower beers have. Very pleasant.

Taste is earthy and yeasty, fairly different from the taste, which is surprising. The esters are further back than the rose, but both make a subtle presence of sweetness. Reminds me a lot of Fantome Hiver (although I admit it's been awhile).

Mouthfeel is dry, but not overly so. Fairly light.

Drinkability is pretty good, this sucker has some nice flavor, but it's subtle enough to quaff. The lighter body adds to the drinkability. Another solid saison from Hof Ten Dormaal, with a nice little touch of depth from the roses.

Pours a cloudy, chunky golden-yellow with an incredibly dense white head that leaves sheets of lacing clinging to the glass. Nice, classic Saison aromas of ripe tree fruit, slightly funky yeast, some bubblegum, and a bit of green banana. Taste is dominated by the earthy Saison yeast, with a nice floral character and a splendidly dry finish. Mouthfeel is light and crisp, with a medium-thin body and sharp carbonation. Overall a lovely Spring/Summer Saison, no clue why it's called "Winter".

2nd beer at Philly beer week.

A - A very turbid apricot color, has a cider like look to it. Some orange and peach skin color for good measure. Slow rising bubbles on one side of the glass.

S - Belgian yeast and strong floral aroma dominates the nose. A bit of grassiness and lemons.

T - Bubblegum, clive and banana. More of a wheat beer than a saison really. There's a bit of a cream flavor here to which is different.

M - Mouthfeel is very smooth and medium bodied. The carbonation feels surprisingly low for the style, but it's still fairly easy drinking for an 8%.

O - This smells like a saison but should be classified as a strong hefe. Not a good hefe, but not horrible. Not 9$ worthy that's for damn sure!
