This beer has been living in my lagering cooler for at least two months now, and tonight seemed like the time to give it a shot. I am pouring it into my Duvel tulip rather than any other glass. I like Impy Stouts in a tulip.

Appearance: After a pretty aggressive pour, the beer was a pitch black color with a small 1/4" head of tan bubbles. The head was quite fizzy and died down to a very small ring where the beer meets the glass.

Aroma: My first impression was of some spicy alcohol already along with some almost nutty roasty notes and a little bit of ashy dryness. Second sniff was giving more dark fruit like plums, raisins, and figs. Some American hops and coffee are coming out as the beer sits a bit.

Taste: The flavor is a good bit different than I was expecting from the aroma. It is much smoother and cleaner than the aroma suggested. The carbonation is present on the palate and helps to keep the beer from feeling heavy on the palate. The beer is a bit warmer now that I am getting into the flavor, but the coffee notes are definitely a key component in the flavor. The hops are quite strong in this beer, but so is the malt, so they are fighting it out to the finish. I wouldn't say that either one wins out in the end, but the finish is pretty dry not only due to the hops, but also because of the carbonation, and dark malt acidity.

Opinion: This is a pretty darn good beer. It already has a good bit of hop complexity that will definitely mellow with age, but I think that the balance is such that it will do really well in a cellar. I will probably end up picking up a couple more and put them back for 2-4 years and see what happens. Regardless, it is a good beer to drink now, but will probably soften up nicely if left to its own devices. I would recommend this beer.

Bottle from Total Wine in Tampa. From notes.

A - Poured black with a half finger light brown head. Spotty lace and a film of retention.

S - Lot's of chocolate. Some roast. Mostly really nice chocolate.

T - Sugar. Roast was much more evident with a nice chocolate component. A little smoke in the finish but very subtle.

M - Good carbonation, medium to full body, and a bitter roasty finish with that small amount of smoke.

O/D - Definitely a tasty Imperial Stout. Lot's of great chocolate dominance, but more subtle notes in the backgroud. Complex and tasty. Split the bottle so the high ABV wasn't too difficult. Couldn't taste the alcohol. A good one.

A: Dark as night, no light penetrates this stout! Half finger of milk chocolate colored head that clings to the edge of the glass as it sinks back in.

S: Dark chocolate, burnt roasty malts. earthy hops detected. Alcohol is noticable.

T: Dark Cocoa burnt toast, and sweet carmel, alcohol warming, but not overpowering (for a 12%) green apple is detected.

M: Big chewy body, low carbonation with a lingering mouth drying astringancy.

O: As it warmed up it got better, but this could have used some time to age to mellow out the alcohol harshness and the green apple (Acetaldehyde).
