750 mL poured into a tumbler. Bottle #2.

Appearance - Hazy orange. Bright orange. Nice white head.

Smell - Orange and brett are the most dominant. Some grassiness and hay. Pale malts.

Taste - Much more orange. More winey. Strong pale malt. Very bretty and earthy. Lingering orange flavor in the finish and just a touch of bitterness.

Mouthfeel - Medium heavy body. Slick. Bretty in the back with a touch of earthiness and acidity.

Overall - It's not life-altering, but it's pretty damn good. Brett is getting a bit strong and masking other flavors.

A. Golden orange, bright,lots of effervescent bubbles

N. Orange, brett, booze, citrus both juice & peel, clementine

T. Really tastes like a mimosa, orange peel, citrus,fruity, more barrel than juicy has.

M. Nice carbonation, champagne bubbles, smooth, boozy finish

O. If u like juicy, this blows it away

Bottle at my Saison tasting with buds. Crazy thick red wax was tough to get thru but managed with a sawzall and a blowtorch. Shared all around with the crew. Poured into my HF wine glass with a cloudy golden hue. Offered up tons of carbonation and an aromatic fluffy head. First whiffs were of a pretty funky brew for a saison - with hints of straw, citrus and orange peel on the nose. Flavors were bready and slightly herbal, with a citrusy / lemon tingle and a drying finish. Soft on the palate. Great beer - though not up to the expectations put on it. Still - a very nice brew and a treat to try.

Bottle #077/450, poured into a Hill Farmstead stem.

Pour: Hazy, glowing orange with two and a half fingers of white, foamy head. Head hangs around for a while, and leaves some great sticky lacing. Definitely a radiant looking beer.

Smell: Huge burst of orange juice and funk up front. A nice clean bit of lactic tartness comes through in the middle. A distinct bready, saison quality provides some depth. Nose ends with more of the recognizable Hill Farmstead funk.

Taste: Starts with fresh squeezed orange juice and orange peel, and immediately mixes with a lactic tartness and some barnyard funk. A doughy sweetness in the middle. A really light white pepper and a tough of oak. Finishes with a lactic orange tartness and some more funk.

Mouthfeel: Insanely drinkable. Really refreshing, and incredibly juicy. Not particularly dry, but there is some character there from the oak. Pretty tart, but not sour.

Overall: Mimosa definitely exceeded my expectations, and they were pretty high to begin with. Not the best Hill Farmstead I’ve had yet, but pretty close. It reminds me of Art with loads of oranges.

Thanks to JAXSON for this bottle.

Appearance: Mimosa pours a moderately hazy golden yellow, with a gentle pour yielding a massive white head. The head lasts really well for a 10% sour and coats the glass in beautiful patterns of sticky lacing as it slowly recedes.

Smell: Wow, this actually smells like a Mimosa - albeit a slightly funkier version. Orange and dry white wine dominate the initial aroma, but a little warming allows some other notes to become apparent. These include: A distinct bretty character (almost barnyardy), oak, old wood, old dry grass and some sweeter fruits (peach and a hint of granadilla).
There is no trace of the 10% noted in the nose.

Taste: As with the nose, the flavour is dominated by big citrus notes, with white wine, oak and some brett character (almost horsey) also present. As the beer warms a light sweeter fruit character is noted, alongside notes of dry grass, sweat and a hint of hops. Warming also adds some alcohol character that seems to clashes with the brett.
The flavour is lightly tart (I was expecting it to be a lot tarter) and the finish is very dry.

Mouthfeel: Medium bodied, with a high level of soft carbonation. The combination of the mouthfeel and the fresh citrus flavour made this a fantastically refreshing beer for a hot summers day.

Overall: Mimosa is a really tasty wild ale, but is a little one dimensional in the flavour department. I would love to see how this one develops with age, but I can't see it ever being worth the price!
