Notes:
Everett (1908-1939) was our grandfather’s brother; Hill Farmstead Brewery rests upon the land that was once home to him and his 13 siblings. In his honor, this Porter is crafted from American malted barley, English and German roasted malts, American hops, our ale yeast, and water from our well. It is unfiltered and naturally carbonated. Decadent in its depth, with a complex backbone of chocolate, coffee, and malty sweetness, this is the ale that I dream to have shared with Everett.
Pale, Caramel, and Chocolate Malt, Roasted Barley, Columbus hops; Ale Yeast, and our Well Water.

A: Chocolate brown in color with a nice tan head to complement. Creamy head. Good lacing.
S: Chocolate, coffee.
T: More of the same from the nose with ample malting present. Sweet and could be a dessert. A subtle fresh hop flavor is present.
M: Creamy, and on the thicker side.
O: Redefines a porter for me - rarely have seen this depth of flavor in this style and really enjoyable.

On-tap at Railroad Street, Linfield, PA.
Appearance: Standard porter. Deep black, small dark tan head.
Nose: Fragrant fresh coffee beans, rich milky chocolate, and a subtle hint of green apple in the background.
Taste: Very clean and rich. Initial taste is freshly brewed dark coffee, there's some lightly tart green apple in the middle, and it finishes with an incredibly rich chocolate covered espresso bean flavor.
Mouthfeel: Perfectly creamy and carbonated. Very drinkable, as a porter should be.
Overall: Easily my favorite porter to date. It's a fairly straightforward style that's taken to a new level of richness and sophistication by Hill Farmstead.

Taken from notes from a recent trip to Montreal and Vermont.
On tap at The Prohibition Pig. Pours a pitch black color with an inch of light brown head. Some lacing. The aroma is of roasted malts, dark chocolate and coffee. Maybe some hints of smoke. This beer has a nice roasted malts flavor with some bitter dark chocolate and coffee. Earthy with hints of smoke. Not much of an alcohol presence. Medium bodied with a creamy mouthfeel. Overall, damn good Porter worth seeking out.

On tap at Torst. My maiden beer there. Pours a dark brown cloudy color with a caramel colored head. Aroma of coffee, chocolate, caramel, alcohol and slight slight spice. Sweet creamy chocolate taste with coffee notes and slight spice pinch. Perhaps a slight vanilla to add silkiness. Love it. Best porter I have had. It gets as close to a stout as a porter will get without crossing the line.

Long story short, this porter is just awesome.
Black in color. Tan head with lace.
Flavors of coffee, roasted malts, cocoa, chocolate, caramel, and vanilla. Rich and creamy. A little bit of hops show. Reminds me of 11 darkness.
Mouthfeel: smooth and creamy. Full bodied with a nice amount of carbonation. Ends a little dry and roasted.
Overall, one of the best porters I have had. Everything you could ask for in a porter.

I had this on tap at Alphabet Beer Co. in NYC. It comes in a beautiful black color with an inviting brownish white head instead of the expected white.
The aroma smells of coffee, malt, and chocolate.
The taste has an smooth bitter chocolate flavor, but then there's a second flavor that hits. It's almost a jump of malt that makes this beer so complex. After a few drinks, it gets a bit boozy, but it's only 7.5%, so it's maybe the bitterness hitting along with the alcohol. It's so lovely and tasty.
The body is creamy, but light. It is very drinkable, though a pint was a bit much for me.
Maybe the best and most balanced porters I have had.

Last reviewed beer from the Blue Dog Wealth of Riches event.
A- A light brown, mocha head sits atop an entirely pitch black brew. No light gets through at all. Good head retention, and lacing trails down the glass as I drink.
S- Burnt crispy malt. Dark and bitter roast coffee.
T- A fairly dry, roasty porter. Definitely taste the coffee, with notes of cocoa as well. Fairly bitter, unsweetened. To me this seems a bit watered down. Definitely takes away from the beer.
M- Smooth medium bodied porter with medium carbonation. Quite drinkable.
O- The keep it simple approach does work for the beer, and it is good. But I don't see this porter as mind blowing as the ratings are. It tasted pretty bland to me. I would have this again and my tastebuds could've been wrecked by this point in the day anyway.

Tap at Capone’s and later at Eulogy for RBSG Philly 2011/Philly Beer Week. The pour is midnight with a utterly insane deep mocha head erupting and sitting still for about 30 minutes. No joke. Infinite retention and giant lace of Jesus. Nose is wet tobacco, chili pepper, hazelnut liquor similar to De Molen Heaven & Hell. Taste has some salty chocolate bacon, savory umami, deep and rich baker chocolate and spicy chili pepper. Buttery, full, De Molen imperial stout palate. Wickedly rich. Unfair to put this in the porter category. Definitely the new superlative for style.

This beer poured out as a deep brownish black color with a thin film on top. Not much head on there or any lacing either. The smell of the beer is a mixture or roasted and smoked malts. The taste of the beer gives off a decent flavor of smoked malt that isn't salty which is a good thing. There isn't much in the way or chocolate or other roasted flavors in this one. The mouthfeel was on the thinner side, kinda low in carbonation. Overall this beer is decent in my opinion, I'm not really a fan of smoked flavors but I think for people who are this beer is awesome for them. I was happy to have tried it.

On tap at Hill Farmstead.
A: dark black in the middle to brown on the edges with a thick tan head that leaves a nice layer on top for the duration of my drink.
S: coffee, sweet caramel, roasted malt, and earthy tones
T: very earthy with a slight sweetness, quite a bit of coffee and roasted notes, and a touch of smoke and chocolate.
M: medium body with a light feeling carbonation that is enough to replenish the layer of head with each sip but not be overwhelming.
O: excellent beer with great characteristics, but not one I would reach for all the time. It's balanced with hoppy bitterness and the sweetness, and a great fall beer. Glad I picked up a few bottles.

not sure about all the hype around this one. on tap at the farmhouse tap in burlington. pours thick dark brown color, blacker than molasses, but with similar viscosity. short tan head rests atop but fades fast. it smells smokey and earthen, curious malt profile, and maybe some black pepper. its a unique aroma to say the least. the flavor is also quite different from other porters ive has, it starts kind of boozy and mellows into a rich malt roast and there is that pepper like flavor again. the finish is thin and empty in feel, but full of flavors of cocoa and tobacco. so hard to place this one. the booze is not well hidden in my opinion and it felt a bit strong. mouthfeel is right on, its bigger than a lot of porters in body, but it drinks nice and smooth, not weighty at all. it went well with the rare lamb burger, but i certainly didnt think this was the best porter ive ever had. that pepper flavor in the middle is still confusing me though... ill have to try this again in another setting.

Served on-tap at Teresa's Next Door during Philly Beer Week.
A - Pours deep brown, might as well be black, with a nice one and a half finger tall mocha colored head leaving thin trails of lace down parts of the glass.
S - Smells of chocolate, coffee, molasses, licorice and plenty of dark roasted malts. A bit of smoke comes through as it sits in the glass. Very nice nose.
T - Starts off with a ton of sweet dark roasted flavors - namely coffee, chocolate and molasses - slowly giving way to some of the other flavors - licorice, smoke and a bit of dark fruit. The dark roasted malt is ever present. Finish is quite roasty but the smooth feel really helps to keep things in check.
M - Big, smooth body with a ton of dark flavors and moderate carbonation. Nice creamy feel brings everything together.
O - I could drink this beer every day no problem. It possesses all of the flavors I look for in a dark beer and the execution is nearly flawless. This deserves all of the praise it receives.

A-Pours a viscous, nearly sludgy consistency. Full bodied. Essentially a stout. Light, bubbled head. Mild lacing.
S-Chock full of coffee beans and artisanal chocolate. Creamy. Chocolate milk and espresso beans. Incredibly rich. Aromatic and wealthy in the nose. Perhaps the perfect Porter nose.
T-Flavor does not disappoint A perfected mixture of Dutch dark chocolate powder and melted milk chocolate. Chocolate-dipped espresso beans. Light vanilla extract. Light hopped bitterness.
M-Full boded. Could mistaken this for a Stout so easily. Why isn't this a stout? A creamy, dessert-worthy feel.
O/D-One of the best Porters I have ever had. Magical. No gimmicks. Just a round, full-bodied treat. A stalwart of its genre.

Review from notes taken at Cigar City Brewing taproom on 7/15/12. Poured on draft into a Cigar City shaker pint glass.
Appearance: Pours a dark brown, almost black with a 1/2 finger light tan head. Decent lacing.
Smell: Roasted coffee, chocolate, toasted malt and white bread crust.
Taste: Milk chocolate, roasted malt and coffee throughout. Aftertaste is bitter coffee with a touch of sweet chocolate. Extremely well-balanced. Excellent flavor.
Mouthfeel: Medium-to-full-bodied with a decent amount of carbonation.
Drinkability: Excellent drinkability. I could drink this all day.
Overall: Excellent beer overall. Maybe the best porter (it's really close to a milk stout in my opinion) I've ever had. It's extremely well-balanced and smooth. I'd recommend trying this one if you get a chance. I hope I'm lucky enough to get some bottles of Everett at some point.

Reviewed from notes. Had on-tap at CCB tasting room. Poured into a pint glass.
A: Extremely dark brown in color with essentially no visible carbonation. Forms only a moderate tan head - but the head has quite a thick, sticky foamy consistency.
S: Chocolate, caramel, slight bacon smoke, vanilla. This smells pretty roasty.
T: This is likely one of the most complex porters I've ever had. Chocolate, cacao, mocha, toffee, vanilla, dark spicy, all with roasted malt. There is just a touch of (hickory?) smoke mid-swallow, especially if I exhale. There is sweetness near the end but a still has a drying finish.
M: The alcohol is nearly unnoticeable. This has an amazing, thick creamy mouthfeel.
O: This is really well done. I'm not generally a big fan of any smoke flavor, but the smokiness here is subtle and compliments rather than overpowers the other flavors. A nice touch & not enough to detract. My first Hill Farmstead brew, but I hope the first of many.

My first time at the the brewery so I had it on tap!
A: 2 fingers of creamy brown head
S: Coffee, cocoa, and vanilla.
T: Sooo smooth, with the perfect blend of coffee and cocoa. Hints of vanilla and sugar really add to the beer nicely.
M: Light but remained creamy.
O: This is the best I have ever had as of today at 10:27 am..

Had this on 2012-06-09 in Wayne, PA at Teresa's Next Door during Philly Beer Week. Had this again on 2012-12-08 at TJ's in Paoli, PA for their 9th anniversary celebration.
A - Dark ruby-brown with a 1-finger tan head. Looks very inviting.
S - Rich, sweet milk chocolate and some roasted grain and coffee.
T - Tons of flavors. Chocolate, expresso, mild anise, roasted grain. Finishes sweet. Not chalky. More flavor than some Imperial Stouts manage. Delicious.
M - Medium body and light carbonation. Smooth and fairly creamy.
O - This is an excellent porter. Maybe the best I've had; beating out Founders Porter.

Hill Farmstead Everett, 9-oz glass at Sunswick 35/35 in Astoria, Queens, New York.
Appearance: About a finger worth of mocha-colored head that lasts and lasts. Great pitch-black looks, menacing but inviting. Persistent lacing and tingly carbonation.
Smell: Smooth, hard to pin. Tad of hops. Bitterness, chocolate, high-end bakery.
Taste: Very roasty-bitter, chocolaty at the end of the sip. Liquid smoke and burnt sugar. Licuorice, nice spicy-hoppy feel in the lips. Coffee all around.
Mouthfeel: A little watery-thin, but good rich-creamy feel nonetheless. Low carbonation and body, medium flavor. Dry finish.
Overall: A good porter indeed, mighty drinkable despite the hefty ABV. Probably better than most American Porters, but not up to the standard-bearer: Founders Porter.

First had: on tap at Blackback Pub, Waterbury, VT
Excellent porter here. Dark brown pour with mahogany tints around the edges, nice finger-plus of fluffy tan head that receded to a thin layer, leaving nice quad-style lacing on the glass. Roasty aroma, scents of dark malts, coffee, toasted grains. Robust and hearty! The taste followed the aroma pretty spot-on, roasted dark malts, pumpernickel, smooth coffee, hearty toasted grains, and just enough brown sugar sweetness to take off whatever edge might have been caused by the dominant roastiness, without offsetting the overall equilibrium. Nice heavy-medium body, tremendously drinkable. Had to bring a 750ml growler home from the source. I don't believe a porter can get any better than this. No nonsense. Exemplary!

A- pours a dark body with a thin layer of mocha foam reaching for the sides of the glass.
S- a robust blast of mocha, cocoa nibs, and even dome coffee scents emerging. There is a secondary blast of dark chocolate that is just as roasty. Really strong
T- wow! What a porter! Massive cocoa and coffee flavors running parallel to some caramel and sugar flavors. The best way to summarize the flavors are completely dark, rich, and robust. Great taste for a porter
M- good flavor that is syrupy and mingles around. Good feel
O- ok, hill farmstead is two for two with me. This is a great porter that exponentially pushes all the flavors that makes up the brew. Absolutely fantastic.

I was excited to see this on tap at Sunswick 35/35, it looks like they are building a solid relationship with HF. Actually got to try this one a few times.
A-solid dark brown with a 1 finger heads that did not go away. Nice lacing.
S-roasted malt and a bit of cocoa. Not much else
T-heavy roasted malt taste with very little sweetness if any, reminiscient of Anchor's variety.
M-rich but not heavy, lower on carbonation like a good porter should.
O-a very solid representation of the style, but not my favorite.

Looks black, but some light shines through. Head leaves minimal lacing.
Smells of burnt caramel and thick chocolate. Pretty robust.
Taste is heavy on the chocolate. Some burnt black malt flavors. Dark caramel. I don't really taste any coffee here. Light bitterness in the finish.
Medium mouthfeel. Just right for a porter.
This is a solid porter. Not sure if it's the hop notes or the burnt caramel flavors I pick up, but it's a bit different than some other porters. Not a bad thing.

A - This beer pours a very dark brown color. There is a little more than a finger of dark tan head resting on top. The head has good retention, and there is some nice scattered lace left behind on the glass.
S - The nose has a nice big dark roasted malt aroma. There are some other nice scents of coffee, chocolate, vanilla, some caramel, and it little touch of booze.
T - The taste follows the nose quite well. It starts off with a big dark roasted malt flavor. Coffee and dark chocolate also stand out well. There are also some flavors of vanilla, some caramel, mild hops, and a little bit of booziness. The finish leaves some lingering roasted malt, coffee, mild hops, and a touch of booze.
M - This has just about a full body and good carbonation. It goes down easy and has a little bit of a chewy quality to it. There is a good amount of initial sweetness and a bold roasted malt bitterness that makes it balance out quite well. There is also a really mild hop bitterness and a touch of boozy warmth.
O - This has good drinkability. It has great flavor and goes down easy. It has a nice balance between roasted bitterness and sweetness. Overall, I think this is a good beer and a really nice example of the style. I really enjoyed this beer, and I recommend trying it out. I would buy it again.

On tap at Pony Bar NYC. A lovely porter, one of the best I’ve ever had.
Deep, dark brown color, bordering on black, with a small brown head that settles slowly, leaving nice lacing. Roasty aroma with notes of chocolate, vanilla, light coffee and smoke. Smells faintly sweet as well. All of this is present in the taste as well, with the standard roast malt, espresso and bittersweet chocolate notes and a subtle, delightful vanilla flavor. Perhaps a touch of maple syrup? Bitterness and hop character is very restrained but still noticeable lurking under the more prominent flavors. Sweeter and creamier than is usual for the style. No booziness. Mouthfeel is medium to on the full side for a porter, with moderate carbonation and an exceptionally smooth and creamy mouthfeel. I really enjoyed the somewhat restrained carbonation as I’m not the biggest fan of porters with prickly carbonation.
Overall a tremendous beer, my first from Hill Farmstead, and certain to not be my last.
