Poured from a fresh 750 bottle into the trusty ol' Chimay chalice.

The body is on the orange side of things. Darker than most tripels. Lovely off white head with lots of bubbles of varying size. The head sticks around forever. Some lacing also decorates the glass.

Big notes of citrus fruits lead with the first jab to the nose followed by a right hook of yeast. The alcohol delivers the finishing uppercut.

Fruits, pepper, and bread tastes dominate. The alcohol is present but pleasant. You feel it more than taste it. A lovely sweetness that is honey like is also there.

Medium body but a little watery. Dry finish with lots of carbonation.

I’ve paired this with some spicy (faux)buffalo wings before and it went very well. Spicy foods seem to mask some of the astringency and alcohol people don’t like about it. The 750 takes a while to get through for this one so I would suggest the stubby bottle for most especially if you are a virgin to this big beer. It might hurt a little.

Served from a 33 cl bottle bought in France.

A - Color is a deep gold or bright orange. It is clear but not crystal clear. The beige head is very active, dense and thick, and remains that way.

S - Some great aromas. Light floral hops, lemon zest, warm biscuity malt. There are some spicy esthers from the yeast. The alcohol is detectable but not harsh. Overall impression is clean, restrained and crisp, rather than over the top in any one area.

T - Moderate hops bitterness is the first thing to register, but warm, bready malt quickly comes in to balance. The hops taste is indistinct, but there is a slight astringency that is almost tea-like. No real yeast or alcohol notes. Very clean, but not very complex or deep in flavors.

M - Light body seems thin for the overall beer. Alcohol is just barely felt. Hops are moderate bitterness. Carbonation is low and does not add much mouthfeel.

O - This is an extremely clean, well-made beer, but for me it lacks anything to make it truly distinctive as a tripel. A little more body and some interesting yeast notes would push it over the top for me.

A: Nice thick head on initial pour into a tulip glass which resolved to nice thin layer and lacing. Nice amber colour with good effervescence without being excessive

S: Bouquet of honey and caramel, fruit esters (a little banana, raisin, apple), hint of alcohol

T: Malty forward taste followed by a little fruit/honey then a hint of hops and a fairly dry clean finish.

M: Fair amount of carbonation, a tad syrup in texture

Quite good overall, at <$4 a bottle its a good tripel though a bit unconventional in its profile. Good with a burger, tacos, a great beer for a picnic.

Smell: chocolate, caramel, and figs

Taste: melon, red apples, lemongrass, tangerines, smoked nuts, and a smooth juicy dryness

This beer is a very under-rated triple that deserves some credence. For some, however, this beer may be very sweet with an odd mix of characteristics; this isn't a typical tripel.
To pair, I would recommend a good quality hamburger or, some skewered prawns or jambalaya; you can do a lot with this beer: get creative
