A - White foam settles to a wispy, near-complete cap and thicker collar, leaving behind thing fingers of lace. Transparent bronze body.

S - So apparently this uses a unknown hop varietal from Shedd Aquarium. Grassy, with slight citrus notes, and perhaps a touch of melon; the hop aroma is initially understated but grows as the beer warms up. More malt-dominated and 'old-school' pale ale; sugar cookie and toffee, with perhaps a touch of brown sugar and crystal malt.

T - The taste is a bit more English than American in terms of pale ales. Malt-dominated, with toffee and treacle sweetness, fruity ale yeast, berries, and grassy and mildly herbal hop flavors. Moderate hop bitterness, with perhaps a touch of dandelion.

M - Moderate carbonation, medium body, slightly grainy texture, dry finish, and some mild residual hop oils.

D - Very continental in hop flavor, even though these are obviously grown locally. I'd probably consider this more of an English Pale Ale in aesthetic. The bitterness gets fatiguing, and the mug serving was a bit too much for me to get down (particularly after E. Normagene and Red Skull samples). Neat idea, but not a very exciting beer.
