This is their flagship Tripel that has been aged for about 10 months in Pinot barrels.
A: Pours a slightly hazy dark honey color; no head, barely any lacing.
S: Tart pinot notes pervade the nose; a little bit of tropical fruit sweetness, but for the most part this is all pinot. Smells a lot like a good sour.
T: Just like the nose, this beer is brimming with tart, smooth, white wine flavors; sweet up front, but quickly opens up to a fruity, slightly peppery tartness that lingers. Very surprising, and very good.
M: Deliciously smooth and buttery, with a velvety richness that coats the mouth exceptionally well; medium-light viscosity with barely any carbonation; surprisingly NOT dry in the slightest.
O: This is a fantastic beer, and I can tell that it was expertly brewed and aged. Delicious!
