Been awhile since I had one of these, would love to see if it still measures up since then. Poured from the bottle into a tulip glass.

A real nice looking white head, a bit soapy, but holds with lots of retention. There is a lot of rising carbonation on this with the classic slow rising carbonation crawling up. Body color is a bit hazy with a sort of dull apricot orange and yellow. Fairly decent tripel appearance.

Nose is a mellow sweetness, mixing with a sense of light honey. There's a sense of crisp coming off this, but there's not much sense of Belgian candi sugar or doughy like malts compared to other tripels. There is some sweet like malts that peek out just a tad. It's otherwise pretty solid and enjoyable and balanced. Smells very clean and carbonated.

Palate hits with a lot of carbonation, but manages to stay in control. Finish has a little bit of sweet banana, but then some classic Belgian like candi comes out. Carbonation on this is very high, and it even brings some tonic water and herbal like qualities to the beer. Sweetness doesn't get too out of control, and coats well in the palate.

Overall it's a solid tripel, but I think I would grab other favorites in this style instead. Nice to go back and review this one.

Old review (Feb 26th 2011) ---

Poured from the bottle into a tulip glass.

A straight forward soapy clean white head of two fingers, falls fairly straight but not too fast. Body shows a nice carbonation from the bottom through a somewhat 50/50 opaque eight carat gold body. Not much of a collar left on the glass after the head falls but it manages to stay.

Bouquet is a slight musty barnyard smell with yeast. Buttery lemon sweetness also, and some sourdough bread. Dental almost toothpaste medicinal in the back on the nose also. Lots to find here, all clean, and all very enjoyable.

Great body upon taste with a bold lemon and honey. Mouth finish is a slight club soda but tolerable. Chew texture and highly teeth coating, faint bread like wheat also on the aftertaste.

Inexpensive to boot and makes for great drinkability. (4, 4.5, 4,5, 4.5, 4.5)

Take this review with a grain of salt. I've enjoyed many Belgium style beers, but after this one it's pretty clear that I do not like the Tripel style.

I don't really know what I was expecting, but La Fin Du Monde is dominated by the flavor of the yeast (eludes to this on the bottle). It is literally all I could taste with the exception of some citrus notes. It was like drinking a biscuit, and it sat really heavy in my stomach after. The bottle said it was brewed with spices, but those took such a backseat to the yeast that I could not pick up what spices they were.

All that being said I tried to review this beer with the style in mind, even if I don't dig it.
