'07 bottle poured into a st bernardus chalice. Served around 40 degrees, free rose to about 45-50.
A - caramel with cherry highlights, head that quickly faded away (not sure if my glass was fully rinsed/clean, only gave it a quick rinse with warm then cool water).
S - over ripened plums, sweet malt and caramel, some esters present, some spicy belgian esters emerge as beer warms.
T - sweet, biscuity/cracker like malt character is present, dark fruits emerge with moderation as beer warms. dark fruit character is very restrained which really aids to an array of flavors. Hops are barely detectable however, sweetness is not cloying nor dominate in the flavor. A slightly oxidized port or sherry note is present but not as a distraction from the finer notes of the beer.
M - The carbonation of this beer really provides a prickily effect on the tounge, only to be smoothed out by the sweet and quite complex malt character. There is a lot of balance to this beer, neither too carbonated nor too cloying.
D - The mouthfeel describes it all, neither too dry nor too cloying. This dubbel slings back easy. Of all the dubbels i have tried over the past couple years chimay red is really hard to beat. With its restraint and balance this beer could be put back all day or night.

Smell: dark plums and tannins withe sweet vinegar subtleties
Taste: a dark fruit bouquet with semi-spiced peppers and red grapes with hints of bitter chocolate (maltiness)
Mouthfeel: slightly effervescent
This is an awesome beer to pair with filet crostini and caramelized onions as well as any cheese that has a sour taste, like a blue or a goat cheese
