Poured from a stubbie bottle into an oversived wine glass.
A-Cloudy straw color with a fluffy shite head. Minimal lacing (which is probably th efault of the glass)
S-Slight smell of florals and alcohol.
T-Wow. I have been trying many differnt tripels in the past few months, and I have to say that this is one of my favorites. There is a spicy note to it, but it is subtle where others seem to be almost overwhelming.
MF-he carbonatoin is high and as such it tickles the tongue a little. Thinner than I was expecting orm looking at it, but it felt very nice.
D-The second most drinkable tripel I've ever had. I enjoyed myself very much.
Overall, I enjoyed it. I'm not done looking for different tripels to try, but I can see me coming back ot this one often.

Yet another beer that I picked up at Top Hops in New York a few weeks back. It took me a long while to get around to giving this a go and after having the Red and Blue, I thought this would be just as strong and dark. Amazingly, this wasn't quite like those and stood on on its own as something separate for the most part, but still just as complex and nuanced as their other popular offerings.
The pour to this was a dark apricot hue with a lot of dark sediment that never fully settled to the bottom of my pint glass. Not a lot to the head but what was present held its own for a while before finally settling down. Nice carbonation too as it was visible but not detracting from the taste of this beer and what a mouthfeel it had. Lots of apple up front that faded into a more subtle pear with a good amount of banana in the back. Not as sour as I thought but it has the complexity of a Belgian beer and that undeniable taste that reminded me of where this was from. One of the smoothest beers I've had in a while as well, as there wasn't a cloying, sticky, or burning sensation here at all - just smoothness of a a well-balanced brew with a surprising lack of a warming aspect to it.
Same for the alcohol - I couldn't believe that this was 8.00% ABV as I finished it off and could only taste the mild fruit and subtle sourness of this. This wasn't like any Tripel I've ever had and it reminded me a bit of mead since there's an undercurrent of fermented honey to the taste and mouthfeel. Easily my favorite Chimay and something I could enjoy all night long. Certainly not to be missed!

The beer comes in a hazy red orange (almost like a Double IPA) with a foamy head. Wonderful beautiful color.
The aroma is a medium breadiness with a tart citric hint. And some warm juicy cherries. With spiced fruits like clove, maybe some cinnamon.
This beer has a nice bite with almost a metallic bitterness in the finish. A mild breadiness. It lacks of bit of character. There isn’t too much bright big fruit like as expected from other tripels. It does however have a wonderful round and mouthfeel. It’s silky almost. There’s a bitterness at the end. I rarely get this outside of hoppy IPAs, but I would describe it as a strong hop bitterness for this beer. However, this does make the beer more drinkable because it’s well balanced. It’s very drinkable and extremely solid.
I had this blind taste tested with Westmalle and La Fin Du Monde. This came in last, with La Fin first. It still does not take away from this being a fantastic beer.

Styl/abv (alcohol by volume): triple/ 8%
Smell: slight butter notes with a floral hue; it's pretty delicate on the nose, hence the flower reference
Taste: what the olfactory senses lack, the taste comes back in a big way. With sweet vanilla, bitter hops, spices, and herbs this beer is a really great gateway triple
Pairs very well with ceviche and Mexican Caesar salads; it's even killer with mozzarella paninis from Starbucks
