Poured out of a short brown bottle into a Boulevard Smokestack chalice/goblet.
Appearance - A deep, ruddy orange color with elements of apricot. Near the bottom of the glass, there is a hint of maize color and small particles of sediment. The head is thick, and creamy and looks like freshly fallen snow. It sits there, 1.5 fingers thick, for at least five minutes.
Aroma - Incredibly enticing. Citrus and orange zest up front that merges into more of a faint floral with elements of yeasty funk on the end. Distinct, but not powerful.
Taste - As expected, the taste is much drier than the aroma lets on. It's dry, but has notes of dried fruit, with a center of hop bitterness coming through. As the taste fades, the funk that was present in the smell shows up, but faintly.
Mouthfeel - The luscious head on this beer makes you feel like you're drinking a beer milkshake, in a good way. It's got a filling, but airy feel once inside your mouth, as even the act of the liquid moving around in your mouth generates more foamy bubbles.
Overall a fantastic representation of the style, and a deceptive 8% ABV, given how easy it is to drink.

Yet another beer that I picked up at Top Hops in New York a few weeks back. It took me a long while to get around to giving this a go and after having the Red and Blue, I thought this would be just as strong and dark. Amazingly, this wasn't quite like those and stood on on its own as something separate for the most part, but still just as complex and nuanced as their other popular offerings.
The pour to this was a dark apricot hue with a lot of dark sediment that never fully settled to the bottom of my pint glass. Not a lot to the head but what was present held its own for a while before finally settling down. Nice carbonation too as it was visible but not detracting from the taste of this beer and what a mouthfeel it had. Lots of apple up front that faded into a more subtle pear with a good amount of banana in the back. Not as sour as I thought but it has the complexity of a Belgian beer and that undeniable taste that reminded me of where this was from. One of the smoothest beers I've had in a while as well, as there wasn't a cloying, sticky, or burning sensation here at all - just smoothness of a a well-balanced brew with a surprising lack of a warming aspect to it.
Same for the alcohol - I couldn't believe that this was 8.00% ABV as I finished it off and could only taste the mild fruit and subtle sourness of this. This wasn't like any Tripel I've ever had and it reminded me a bit of mead since there's an undercurrent of fermented honey to the taste and mouthfeel. Easily my favorite Chimay and something I could enjoy all night long. Certainly not to be missed!
