Notes:
Trébuchet was created by aging Chaparral Saison in Sauvignon Blanc barrels for 7 months, with additions of lactobacillus for a distinct tartness without “barnyard” character.

On-tap at Oakquinox
Pours a cloudy golden color with a white head. The wine comes through strongly on the nose. Lots and lots of white grape aroma and a surprising amount of sweet malt. There is just a light, lactic tartness to it and a bit of green apple. The flavor is tart with lemon, lemon peel, and green apple. A bit of grass and musty oak provide some slight funk.

On tap at Ladyface Ale Companie in Agoura Hills, CA.
Pours a slightly murky light yellow with an off-white head that settles to a film on top of the beer. Foamy rings of lace form around the glass on the drink down. Smell is sour and tart with some spice, wood, and slight wine aromas. Taste is of grain, sour/tart fruit, wood, and some slight wine flavors on the finish. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a good beer that has some good barrel aging going on.
