Cottonmouth doesn't knock your socks off, but it does something I think is more important: It tastes good and drinks easy. I don't want every beer I touch to blow me out of my seat, or send me sprawling for my notebook to try to document all the flavors happening. Sometimes I just want to drink a beer. This is one of those beers that gives you no excuse to stray from the craft beer world because it accomplishes the same familiar and approachable flavor that less stylistically ambitious brewers have relied upon for years... it is one of those "bon ami" beers. This is an unassuming Wit-style and a reliable drinker for when you're done challenging your palate for the evening and just want to relax with a nice glass to sip on.
The wheat is immediately apparent in the smell. The head is frothy and loose, and melts away pretty quickly. It looks pretty pale and unassuming in the glass. The celeral comes back at the top of the sip. There is a bit of sweet, a bit of fermented cereal grain, a tingle of sour, a then a long, clean, sort of creamy finish. Lingering at the back of the palate, a fruit note. I've seen it described as banana, but for me it is more like fresh papaya.
There are better wits, there are more complex wits, but this beer is excellent, drinkable, and actually quite charming. If you're in Florida and like to drink local/regional, this is one of the best. If you're not and you just want a solid, tasty wit, also excellent.

On tap at the brewery.
Sampling this one without any reference, it was immediately clear that this was a Belgian style wit. Both the wheaty grain notes and plenty of banana from the yeast. A familiar style, but not a favorite.
The pour was very light yellow-gold in color, crystal clear with a durable white head than left some sticky lacing on the glass. There's a rather pronounced ripe banana note in the fruity nose.
Nice sweet/tart balance is a little on the sweet side.
The strong banana fades by the finish, leaving a lightly spicy and bready aftertaste.
Light body with very good carbonation.

I live in gainesville, so this is nice to have a beer thats brewed right here. Nice deep orange color and a nice barely off white head. Smelled malty and sweet and fruity. Taste was good, not great. Bitter toward end, and a little fruitiness. Medium to heavy body, glides down easy. Overall, this is definitely worth getting, and even worth getting again.

Pale hazy golden, perhaps a shade lighter than that. A well formed white, frothy head that lasted the entire time. Hint of orange or lemon rind with a sweet, pale grain aroma. Honey, bread, hint of yeast, and orange peel in the flavor, finishing dry and with a very slight bit of bitterness. Nicely carbonated. A decent wit.
