Beer is a copper/amber with a light head. Smell is nice and hoppy, with notes of citrus and pine. Taste is nice and bitter with an assertive hop blast. Some nice citrus and pine that fade and leave a slightly yeasty finish. The mouthfeel is good. Well carbonated and quite drinkable. All in all, a good IPA. It's nice and bitter, the hops are interesting, although not quite as floral as I had expected. Nevertheless, a very good to excellent IPA.

Got this one at Peluso in Montreal, as I did a pile of beers from this awesome brewery.
From a bottle into a snifter
IBU: 66
APPEARANCE: Pours a small, medium looking, off-white head with good retention. Head fades toa faint wisp and ring. Hazy safety orange in color with lower levels of carbonation. A splotchy wisp remains until the end and leaves some dots of lacing down the glass. Good looking beer for sure.
SMELL: Pale malts, caramel notes, as well as some honeydew melon. Pineapple notes as well. Nice and fruity, and a touch bolder than their English IPA.
TASTE: Pale malts, honeydew melon and caramel sweetness. Some more fruity, sweet melon notes at the swallow, moving into a medium but very persistent aftertaste of bitter floral hops and plenty of piney flavors. Quite flavorful, and relatively bitter as well.
PALATE: Medium body and medium levels of carbonation. Smooth and creamy on the palate, goes down fine and finishes quite dry on the palate. Pretty nice, and drier than their English IPA.
OVERALL: Another high quality IPA from Illimites. Their English IPA was quality, and this is an impressive stab at an American hop IPA. Quality beer from a quality brewery. Give it a shot if you see it.

Pours a cloudy burnt orange with an ample, though shortlived head. Citrusy and herbal hop notes mix with grainy malts and fruity yeast esters in the nose. Grapefruit hops are up front in the taste. Also grape skin, white wine, demerara sugar and christmas pudding make things interesting. The mouthfeel is full bodied and mouthcoating with both bitterness and an almost cloying sweetness. Its unusual and hard to describe. The finish is bitter and fruity and lasts a long time.
This is a good IPA, but I think it strays a little from the course for the style. There's too much other stuff going on my imo. The hops and bitterness are certainly there, but should be more the focus. Still worth a try for sure.

Color gold orange. Cascade hop citrus aroma, bread. Good foam when pourred then becomes thin but persistant. Taste: hops, hops and hops, citrus and a touch of toasted caramel. Light to medium bodied. Long and bitter finish. Refreshing. Great beer. One of my favorite IPA.

Bottle purchased on a recent trip to Montreal. Poured in to Duvel tulip.
No freshness information was evident.
A - Poured a medium amber colour, very slightly translucent with two fingers of bubbly, white head.
S - Very noticeable sweet caramel malts hit the nose initially with some pine and very muted citrus notes evident from the hops. The citrus is so muted that I wonder if I would have even detected it had I not known that this was a Cascade hop IPA. Smells like a bottle that is far from fresh.
T - Some bitterness up front with a very heavy sweet caramel malt presence. Virtually no flavour contribution form the hops at all. None of the great citrus flavours of the cascade hop are evident here, which is disappointing. Clearly a bottle that was no fresh.
M - Light body, moderate carbonation.
O - This bottle was clearly past it prime. If a brewery chooses not to put freshness info on their bottles, they are fair game for reviews to be posted IMO. I would not have wasted my money on this bottle had I known that this was an old bottle.

Picked this up in Montreal. Pours a clear light amber with an inch of off-white head, spots of lacing.
Understated aromas of caramel malts and hops. Detecting some diacetyl.
Taste is a little disappointing. Malt and mild bitter hops..not particularly flavorful. Though malty, the bitterness lingers in the aftertaste..a tad astringent..The label made me think this would be a little more extreme! Though I like some other beers from this brewery, I wouldn’t recommend this one. Not the best example of a Cascade IPA.

A: Pale orange or a light copper colour with a finger of thick creamy head.
S: Smell of piney hops along with a fruity and sweet orange aroma. Picking up a faint herbal/grass scent aswell that could be attributed to the hops.
T: Bitter cascade hops that are kept in-line with a sweet malty backbone. Picking up an orange tangy taste, with some other citrus notes. Nicely mellow and smooth with a lingering bitterness. Overall a good taste but feel this would be better with a stronger emphasis on these great hops.
M: Full mouthfeel, with a creaminess to it. Mildly carbonated.
D: Quite a good and easy-to-drink IPA, and would certainly seek this out again. Very sessionable.

There's nothing really outstanding about how this beer looks. Its quite average for an American IPA actually. It had a nice head initially with OK retention.
Smell? What smell? Way too weak. A faint aroma of hops but nothing to prepare you for what's about to come when you take a sip.
The taste, however, is a notch above - although I admit to being quite fond of cascade hops so its a no-brainer for me. At first the sweet malty characters are what's easiest to notice, but man does that aftertaste kick you in the ass! True to the beer's name, Cascade IPA is full of that bitter hoppy flavour that so many of us love. The balance is almost perfect, and the citrus notes keep me interested through the whole sip.
There isn't too much carbonation here, and the beer ends up sitting in my stomach quite comfortably. Cascade IPA is well worth a try.

341ml bottle poured into a tumble.
Pours a slightly hazy amber with a really nice one finger slightly orange head thats really fluffy. Nose is quite malty with a small grassy hop note.
Very malty and grainy rather than hoppy and fresh like I'd expect from an IPA. There is a lot of caramel flavors as well. It's a bit odd, I'm not totally sure why though.

Served in a chilled glass
Appearance - beer pours a hazy deep ale colour, there is some nice carbonation. the head is slightly off-white with a nice foamy appearance. there is some good lacing occurring.
Smell - i can smell pine right away, some sweetness and a very subtle hint of spices. sweetness would come from a caramel base.
Taste - nice tasting, easy beer. pine comes through with the caramel, then there is a slight bitterness near the end. nothing lasting, but the bitterness is there.
Mouthfeel - added carbonation creates a nice mouthfeel, very full actually. the bitterness is increased, along with the pine taste.
Drinkability - I enjoyed this beer, real simple and straight fwd with a nice balanced taste.

have tried this beer a fair amount of times before.
this bottle poured a nice, very clear amber/bronze color. good amount of foamy white head which turned into lace that stuck around for the entire beer. fruit, malt, and a bit of hops create a pleasant smell.
had a nice bitter taste, with sweet critusy/fruity notes. a bit too malty on the finish for me though... could be a little more hoppy and better balanced but a decent ipa nonetheless.

Appearance - The beer pours a clear amber colour with a very large fluffy/foamy off white head. Lots of carbonation is showing and there is some really nice lacing down the sides of the glass. The head lasted for several minutes before it was gone.
Smell - hops, malts, citrus zest, pine
Taste & Mouth - The beer has an average amount of carbonation, the bubbles are fairly large. The beer has a little bit of a creamy feel to it as well. The most noticeable flavour is potent hops. It could almost be described a sharp or crisp hop flavour. There is also some caramel and malts mixed with citrus zest and pine. The beer finishes with a bitter hop aftertaste.
Drink - Another solid beer from this brewery. Worth seeking out for sure.

A - Bright with medium carbonation. Nice soft one finger white head that holds together. Golden to copper in colour. Head fades toward the end and leaves just a spec of lacing.
S - Citrusy nose with a nice hint of pine. I can sense the matls there too.
T - Good malts there. With the same character from the hops; citrusy with some pine. Nice balance. Nice bitterness to finish but not overpowering.
M - Really smooth feeling. Refreshing.
D - Pretty good here. Not too far out of balance like some IPAs. Nice stuff.

IMHO this is a great session IPA.
It has an attractive orange bronze colour that's clear with golden highlights. The head recedes to a small cap of foam but leaves lacing down the side of the glass.
The smell is citrus.. pineapple and oranges with a hint of pine. Very nice.
The taste is a good mix of caramel malt and assertive hops and the volume levels are just right so that this one doesn't become overpowering.
Mouthfeel is refreshingly crisp without any stickiness at all. All of this adds up to a great session IPA.
