12oz into a snifter.
A: Pours a glowing dark honey color with a small off-white head.
S: Simcoe is still going strong in the nose, with notes of juicy grapefruit, honey, marshmallow, lime zest, mango, fresh grain.
T: Taste comprises pineapple, bitterish resin and pine sap, malty vanilla, stone fruit, honey, white cake, cloves, hint of dark alcohol.
M: Medium-bodied with light carbonation.
O: Even with a few months of age on it, this still feels like a bright and juicy Belgian DIPA. Very tasty.

Simco Sillier on tap 11/13/15. Poured a light, reddish brown with a thin head that dissapated and left moderate lacing arounf the glass. Smelled of malty sweetness and hops. Taste is similar, with fruity notes. Full mouthfeel. Overall, I'm glad I got to try this. It is exceptionally smooth for 12%.

Pours amber with nice head. Aged a little longer than I'd like in my fridge. Simcoe and Belgian yeast give it a nice sweet malty and citrus flavor. Smooth and easy drinking. Held up well.

Short Review. This is a nice Belgian style DIPA, the hop flavors are big and fruity with lots of tropical and citrus aspects making for a pineapple orange juice like flavor, plus they go great with the Belgian which shows up just enough and it never gets to be too overpowering. The alcohol was pretty well hidden, this would be deadly in the summertime. I was impressed with this one and I really enjoyed it.
