A: The beer was a dark red color with a little brown. There was a light tan head on top that lasted a long time.

S: Like Rochefort 6, I smelled a dried fruit aroma, but the smell was more robust in Rochefort 8. I also noticed some of the alcohol as well.

T: I mainly tasted the dried fruit flavor, similar to Rochefort 6. However, this beer was sweeter and more complex overall. There was a strong roasty flavor that I guess would be from the type of malt used. The alcohol was blended well with the other flavors.

M: This beer had a good level of carbonation- somewhat on the lower side. The carbonation combined with the head foam created a smooth-drinking beer.

D: I really enjoyed this beer overall. While I noticed similarities to Rochefort 6, I definitely liked Rochefort 8 more. It seems the extra time utilized in making this beer made it better fit my taste preferences. If a longer brewing time brings about improvements for Rochefort's beers, then I am excited to try Rochefort 10 soon.

Glass: Port City Belgian style snifter.

Appearance: Dark ruby-brown in color. A moderate pour produced a finger of bright white head that dissipated relatively quickly. Hazy, with much sediment that eventually settled on the bottom of the glass.

Smell: Bread, caramel, bananas, raisins, spices, and a bit of alcohol.

Taste: Much like the smell, this one tastes super sweet. Caramel is extremely prominent, as is the typical Belgian candi sugar. Dark fruits can be found throughout, with spices playing a side role. The banana which was difficult to find in the smell remains difficult to find in the taste. A strong exhale does produce some tastes of banana, however. Bready aftertaste. Alcohol is well hidden.

Mouthfeel: Medium body with low-medium carbonation. A little sticky, due to the sugars, I suppose.

Overall: A great beer. I enjoy the Belgian candi sugar, but it does come across very sweet. Like a tasty desert, this is one that I will enjoy only from time to time.
