American Double / Imperial Stout
Limited (brewed once).
Elysium is simply a place or condition of ideal happiness. Our idea of happiness is a barrel aged stout to share with family and good friends. Each barrel we use is carefully selected, a little wild, filled with stout, and aged till it’s ready. There is no hurrying a barrel. For this we think the effort is well worth the wait.
Barrel Three: Mild nose, rich smooth malts with oak, Bourbon, vanilla and raspberries

Bottled: July 13, 2010, Barrel: Three, Bottle: 42 of 96. Purchased at White Birch. 22 oz bomber into a tulip glass.
No initial gush but the bottle did open with a huge pop. After the first pour the beer in the bottle slowly gushed, it took about 20 minutes for the foam to rise above the neck.
A - Pours a black body that's dark brown around the edges against the light. Dense two finger mocha head settles into a patchy cap that stick around for a while. Great edging. Lacing ad retention is also quite solid.
S - Roasted malts, light coffee, tart raspberries, vanilla, sweet candy. The best of the series by far.
T - Bitter coffee, milk chocolate, a touch of raspberries and cream. Taste is like a raspberry coffee K-cup or something. Like the other barrels, its very muted and watery. Such a shame really since the slight bit of flavor it does have seems to be quite nice.
M - Medium bodied with some silkiness to it. Low carbonation.
O - The best of the three that I have tried, but barely. This beer did offer a glimmer of hope as the aroma seemed to capture the brewers intentions of a slightly tart and fruity barrel aged stout. But its just lacking everywhere. Flavor is faint, carbonation is barely holing on, and the aroma is just a tease into something great. Aged for almost two and half yeas in 2007 Utopias barrels...and this is the result? I'm not even going to bother trying to get Barrel Five.

Pours into the glass an inky black color with a solid three finger bubbly tan head that slowly dissipates but leaves lots of lace sticking to the glass in its wake. The aroma fills my meager nostrils with dark roasted malts, caramel, vanilla, charred wood, tart fruits and earthy ash. The flavor is that of a stout, or what used to be a stout before some bugs got at the sweetness within. Light cocoa and caramel mixed with vanilla and wood with a solid shot of raspberries and a bit of ashy wood. Medium body with a moderate to high level of carbonation and a tart sweet bubbly mouthfeel. The tart fruit is starting to take over the stout in this one and the bubbles for me are starting to mess with the mouthfeel. Decent stout that I'm glad I got to try, but probably my least favorite so far of the Elysium barrel treatments.
