The New School:
"...in the vein of a Lambic style of wild beer though it does not use wheat and of course is not spontaneously fermented. [I]t was fermented entirely in oak barrels [that] were stuffed with fresh peaches from Baird family orchards."

2013 vintage. 750ml white waxed bottle into a HF over sized wine glass.
A - Pours a hazy...well its a peach colored body. An initial fingers worth of soapy foam with large bubbles forms but settles into some edging pretty quickly. Decent lacing with minimal retention. The peach color though, man does it look good. Swirling the dregs for the final pour gives it an amazing fruit smoothie look.
S - Super funky brettanomyces and lactic acid followed by over ripe peach juice. There is a subtle, almost spicy vanilla thing that I get on the very end that I would imagine is coming from the barrels.
T - That distinct brett funk followed by a wave of lactic acid twang. This goes head to head with sweet peach juice and a touch of oak. Lightly sour with a long lasting juiciness. This is a very drinkable beer and something that is perfect for the warmer months. Mouth feel is crisp and lively while maintaining a medium body.
O - This beer is excellent. Truly one of the best American Wilds I have had the privilege of trying. I wish I had it a bit fresher as the peaches are sort of playing second fiddle to the critters, but god damn is this a tasty beer!

Opened at 4/20 tasting.
Pours a hazy bright yellow, solid layer of white head.
Smells of lots of sweet peach, then lactic tartness, hints of funk.
Similar in taste--lots of sweet peach, dry and moderately sour, touch of brett.
Good carbonation and drinkability, nice refreshing sour.
Great beer, probably slightly overrated but still plenty good.

This is a very nice, easy drinking beer. Thanks to starrdogg for bringing this over to taste.
The look is great, it has a super hazy golden look, almost like a peach juice with a bit of head and some floating bubbles. Very nice.
The smell and taste resemble each other in a big way, tons of fresh peaches and nice oak touches, a very composed saison like malt and feel. Some nice yeast notes and even more beautiful fruit notes. Just a really easy drinkable nice beer, but not really tart like you'd expect a 'wild' to be.
Another very nice beer.

750ml bottle from the 2013 release poured into a Lawson's tulip. Another bottle graciously shared by JD (shawdeuce22) at his birthday tasting.
A- Pours a translucent golden with decent carbonation and a thin white head that forms that has nice retention.
S- Fresh peaches, peach skin, some subtle brett, fairly aromatic.
T- Peach juice, fuzzy peach skin, some subtle brett funk that balances nicely with the peaches, finishes with a very light sour peach presence.
M- Has a light feel to it but is fairly full bodied, slightly dry, refreshing, extremely drinkable. Feel fits perfectly with the fuzzy peach presence.
O- This was a fantastic peach wild ale and it is hard to decide if I like this better the Peche n' Brett or Persica, the later which we drank right before this. Persica definitely had more of a funk presence, probably because it had longer for the brett to come out. I really liked the fuzzy peach skin presence and drinkability on Fantasia though. I could easily drink this all the time and wish it were easily available to me.

Bottle of Fantasia, shared amongst a few friends.
Upon pouring into a small tulip glass, the appearance is bright orange with a small white head. Its` nose contains barn funk, peach, brett. Taking this back for a sip and I taste more of those peaches, tartness, it does make your mouth pucker a bit. It tastes very good, very glad that my friend brought this out. Mouthfeel is medium level, nice carbonation, finishes very crisp. Some tartness lingers afterwards. A very good sour style beer from Upright, would recommend trying to grab a bottle.

Reviewed from notes. 2012, most recent release. Poured from a 750 ml bottle into a Half Acre snifter.
A- Pours a cloudy honey/orange color with a 2 finger white head. No lacing.
S- Vinegar, some funk, and sour peaches.
T- pale malts, citrus/peach, light vinegar, and funkiness.
M- Light body and medium carbonation. very easy drinking with a dry finish.
O- 5/10 sourness. Nice easy drinking sour.
