This version is aged for 8 mo. in wine barrels.

Med body, syrupy mouth-feel, no carbonation.
Strong sour note upfront with a strong astringent citrus note and hints of hay.
Finishes with a strong lemon note and a hint of fruitiness.
Overall; solid sourness, well balanced.
