Poured from bomber to snifter
A: Pours a bright yellow with a small white head which fades quickly. The only positive about the appearance is the bright body.
S: Yum! wild yeast with strong lemony citrus and some earthy dull earthy tones. Very strong appealing scent.
T: very surprising, the taste is no where near the intensity of the smell. lemon and yeast come out the most, with small amounts of earthiness. The taste is very dull compared to the smell. The funkiness is still there, but not what you expect. As this beer gets warmer it the funky flavor come out a lot as does the sour. Serve this just below room temp.
M&D: Mouthfeel is thin and decently carbonated. Drinkability is very high, since the taste is mild a person could do a bomber easily.

opened with a small pffft, fill line less than a half inch below the top of the bottle--if it wasn't undercarbonated it would have overflowed for sure. Did pour about a 1/8 inch head which dissipated to just a line around the glass fairly quickly. No bubbles from the bottom, it's like it's flat. But there was BIG orange/tangerine, lemon and funk and oak in the nose, I get it as I pour. Attractive straw-gold color, hazy. First sip TART. Tangerine, lemon-lime, oak, I'm not really picking up the pepper other reviewers get, but coriander I think for sure. (look at label, yep coriander--but rose hips, my palate didn't pick em up til I read the label, but definitely get the rosehips once I'm looking for em) As it warms, some melon? cross between honeydew and canteloupe I think. A very pleasant but not overwhelming or out-of-balance tartness continues throughout.
Despite the lack of carbonation it has a silky mouthfeel...almost seems to liven up when it hits your tongue.
I like this beer a LOT.
Reading other reviews I get the feeling this beer varies quite a bit batch to batch so: Label says what I'm drinking is Barrel Number 7743 (could be 7793) 1-6 and Bottle Number 1578 3/13.
Pouring the last 2 ounces releases the 1/8 inch of yeast residue in the bottom of the bottle. for these last two ounces, a chalky tartness is the primary sensation.

The beer is hazy and straw yellow with a thin white head. The aroma offers oranges, light spice, pepper. The flavor brings orange rind, peppercorn, spice. A bit odd in the feel and aftertaste department. Pretty good.

750ml bottle $15.99. I think this is the only my second Trinity beer after Old Growth a couple years back. Chilled the bottle down for days and when I opened it there was no gushing but the bubbles began creeping up out the bottle. Color is hazy yellow, just a shade darker than your standard wit. Head is a a ring of bubbles at the edge and a film on the top. Aroma is stinky, slightest touch of bile. Flavor is a bit of orange fighting with more bile. Uh....I was expecting something sour but this is sort of weird. Definite pepper going on, citrus, and that hint of vomit. Its not a drainpour but I don't know how this is a GABF Gold Medal winner. GABF is wack as fuck. I would definitely never cop this again.

This beer was reviewed blind thanks to quirkzoo and the Blind BIF 7
Bottles 5A & 5B from Quirkzoo, not necessarily a pair but hell, why not.
Both bottles are lightly waxed, red and yellow. good grief, these bottles look beautiful together, and I can smell the aromas already.
5A Pours a dark cherry red with very little foam. There is a ring of bubbles around the glass but no real foam. The aroma is all grape tannin. It smells like a young merlot. Wow, the taste is very grape like. I'm getting a lot of grape skins and bitterness. Its very good and enjoyable,and finishes very tart. I keep going back for another sip. Very tart and slightly acidic. I really have no guess on these. I'm guessing this could be a flanders red, but not sure.
5B Again, a lot of grape skins but a bit sweeter. this beer is like a chardonnay compared to the merlot of 5A. Light bodied, a bit more foam, there is some apple, pear, maybe a bit of coriander, grape skins. I'm picking up some oak as well. Very light bodied and well carbonated. Again, I don't have a guess. Its definitely something I've never had, along with 5A.
5B is way more drinkable, while 5A is definitely more flavorful.
so I guess its time to see what quirkzoo sent me…
I almost don't want to tear off the labels because these beers are so enjoyable that its nice to drink them without knowing what they are…

Well excuse my language but holy shit! This is just insane. Quirkzoo you went above and way beyond with these. What I thought was wine flavor was the cherries and oak in The Flavor. I'm really at a loss for what to say after this. To me these were two beers that I thought I'd never get to try and tasting them blind is exactly what this BIF is about. Big wants for sure and all I can say is thank you.

A- Poured from a 750ml bottle, cloudy golden with just a little ring of white head
S- Lemongrass, clove or coriander, yeast tanginess, white wine
T- Sweet and tangy, softens to a white wineish flavor, very noticeable light citrus throughout, aftertaste is slightly dry and a very faint golden malt
M- Moderate-high carbonation, light body, very clean, slightly dry, kind of tingly on the tongue
O- Very refreshing, good balance of flavors, distinct white wine flavor from the barreling, very enjoyable overall

The Good - Smell is lambic like and quite delicioius. Can't wait to try this beer.
The Average - The color of this beer is very light straw yellow. Almost no head or lacing. Some moderate haze in the body. The taste is nowhere near the lambic scent I was picking up. Not nearly as sour but well balanced between the sweet floral taste and sourness. Mouthfeel has great carbonation and light body.
The Judgment - A decent beer that would be good in between larger offerings at a tasting. Just too expensive to be an everyday type beer.
