It seemed like a good enough night to open an Adam. I didn't know what to expect, as I've fortunately (or unfortunately) had the pleasure of tasting a Cherry Adam from the Wood at a recent tasting. I thought that beer was stellar, so I could only hope the base of that beer could hold up.

Batch 80 into generic snifter.

A: supper biscuity fine bubble tan head that plumps like a pickled plum. Lots of complex purples, deep cherry reds, and general dark wood stains swirl in the body. The bubbles have an undeniable creamy coffee look that just adds to the mystique. The beer already looks delicious.

S: Really soft fig on leather, really thick shredded leather musk that takes me right to the private studio of a leather worker. Old cinnamon sticks that lose their gritty vibrancy, but give off that chewed bark earthiness. Very full aromatics.

T: Lots of cowboy boot and deep warm dark chocolates. A really thick Bakers chocolate flavor with thick fortified fig flavor following the coco powder. Light raisin with the sweetness being tamed behind Mexican mole like complexity. Light cherry behind an alcoholic plum. Really just everything you could ever want in an old ale, with an alcohol that pops off elegantly. Super fine beer, great age for this (I'll have to match it with the batch).

M: Full bodied mouth, thick mole sauce in the mouth that has a mousse like fluffiness from everlasting foams. Creamy hot coco with a touch of slick booze. I'm crazy about this mouth, this could have come out of a 25$ bottle and I'd be praising it all the same. Sensational.

O: I really need to load up on this beer and just taste it at different ages. This thing drinks phenomenally, it just keeps giving sip after sip. If you want an amazing performer in style, look no further than Adam. World class in every sense. I will load up on this, and put it away for constant visitation. I really need to get some Cherry Adam from the Wood to hold onto. If this is this good, then I'd love to see how the other version competes in aging.

Poured a murkey black brown ruby hue with no foam to speak of just a thin ring of beige color and the viscous liquid has legs and no lace.

Sweet very ripe fig and assorted dark stone fruit aromas dominate. Some background dark roastiness from grain with little to no hop aromas.

Sweet yet not cloying again with the really ripe dark stone fruit flavors with just the right kiss of hop bitterness.

Certainly full bodied viscous potion that coats the mouth with vigor.

Wow, Great brew though not quite my style.

Picked this up at Top Hops in NYC

A: Poured a really nice cola-like brown, perhaps more on the brown side. Two fingers of creamy, off-white khaki head. Sticks around greatly.

S: Wow! Effervescent! Sweet caramel, burnt brown sugar, some dark fruits, and a hint of smoke. The creamy sweetness is dominant.

T: It doesn't QUITE live up to the smell, but still really great. Caramel, smoke, little bit of chocolate, and some cola-like notes

M: Pretty spot on. Carbonation is just enough to rinse the pallet.

O: Great old ale. Must. Find. AFtW!
