The Bruery made this ale with a base malt of 40 percent rye, then let their sour yeast and bacteria eat away at it in oak barrels for a year. Poured into a tulip.
Since I finished this whole bottle myself, I can attest to the changes as it warms and gets deeper. At first, a vigorous pour isn’t able to summon any head at all — just a glassful of shiny mahogany brew. The final pour is the murkiest, muddy dark and the color of rust. But, it has half a finger of cream-colored, dense head that becomes a thick and retentive ring.
Sweet toffee leads the way, backed by a hefty balsamic tartness, dark cherries and lemon peel. Vinous oak, blasts of vanilla and hints of cocoa provide a base. Hot damn.
Tons of lactic sourness in the flavor. White grape, orange, cherry, rye, and a good dose of sourness. Also butterscotch, with more butter than scotch, and vanilla ice cream. Crazy complex.
A soft touch of tingly carbonation is all I can get out of this guy, but the funny thing is, it works. Heavy lactic sourness and rye spice provide enough tongue action that any major carbonation would be too much. Alcohol is unnoticeable, hidden behind pounds and pounds of flavor.
I’m going to throw this out there, and I don’t say this lightly: Sour in the Rye is my favorite Bruery beer. The balance of spicy rye malt, tart bacteria and oak is just perfect. Like I said, I finished the whole bottle myself, and I’d do it again in a heartbeat. Glorious stuff.

The color is amber/peach with a big head.
The aroma is very tart and vinous qualities. That hits you first and then citrus and berries. Then there is also a slight bready rye. There’s some funkiness too.
The taste follows with tons of vinegar and citric sourness in the front. The fruits are in there, but are quite hard to pick out. The sourness really does smack you. There’s a good malt rye backbone. There is a Flanders style in there too because it reminds me of a less sweet Cuvee de Jacobin.
There is a super clean finish, which makes it refreshing. It also reminds me of a very sour Berliner weisse because of the drinkability.
This beer is really delicious, but it really did not blow me away as it lacks some complexity. It has issues with its value. I paid $12 for 12 oz. on draft and it’s about the same with $1 per oz. if you buy in the bottle.

Bottle, date unknown.
Appearance: Rusty blonde unfiltered cloudiness with nice carbonation. The small white head that formed quickly fades to the perimeter.
Smell: Sour funkiness to the umpteenth degree. Some Rye spiciness is definitely present, along with some sour apple and pear notes. I'm also picking up some wheat and honey sweetness.
Taste: Pucker up...wow! This beer is just amazing in how you think it's sour at first, but the sourness just continues to crescendo on your palate long after the drink is done, on the back end of your tongue. Definitely getting sour wheat, with a bit of spiciness. The Rye barrel pizazz lasts into the finish and leaves an impression on the tongue along with the sour raunch. The way this beer attacks your tongue is just incredible; the booze is hidden masterfully.
Mouthfeel: The carbonation is lively and the body is just right; this is drinkable as hell.
Overall: Haven't been let down by a Bruery sour yet. Not much to dislike about this; and thus, my rating.
