Visually, this beer is difficult to judge and its fault is partially my own. The first pour came out beautiful. Clean light amber with a foamy and rocky white head leaving a small island surrounded by a coastline around the glass. The second pour had the sediment making for a much murkier deep yellow to gold.

The aroma does a wonderful dance with the sense of smell. Tart berries, light oak, honey, hay and dried grass, and the ever familiar "sweaty horse" funk.

The taste buds celebrate a similar tune. The tart berry like flavors are very dominant initially, but as it warms the oak and honey, grass and farm take their time to settle in before leading to a mild earthy and "soapy" finish.

It's crisp, mildly tart and dry. The oak gives it nearly a white wine like finish. The light bubbles aid to a percieved bitterness, and though it's difficult to describe, the earthiness creates it's own signature to the feel.

This was a true pleasure. In a blind tasting, I would bet for sure that this had come from some of the European masters of the style. It's so delicately flavorful and hits all the right marks in the other categories. Cheers!

500ml bottle from "b2 taphouse" in Salem OR Pours a slightly turbid darker gold colour body with a small frothy cream coloured head. Slightly tart and sour aromas, bananas, clove and vanilla wood. Taste similar..but with the sourness rising towards the end..creamy esthiness..if thats even possible! Nice moderate mouth feel..perhaps if there is a fault coud have more carbonation..but its fine enough. Great beer..one for the fall.

750ml C&C of the 2012 vintage. Poured into a Cantillon taster 7/7/2014.

A- Slightly hazy straw yellow body. For some reason, it is particularly appealing. Two finger white head with good retention, a bit of lacing.

S- Peppery, slight lemon zest, oak, a bit of funk. Not particularly complex, but it does have a slight sweetness to it in comparison to Dupont.

F- Lemon zest, a bit of funk (but not a ton), honey, peppercorns, oak. Again, not particularly complex and does not have much tartness like I'd prefer, but this is well-put together with all of its components.

M- Medium bodied, well carbonated, smooth-drinking. The finish is a bit more bitter than I'd like, perhaps from the noble hops.

O- Solid saison, I know this has a relatively low bottle count but it's basically a slightly better version of fresh, unskunked Saison Dupont.

The front hits of tartness of lemons along with kiwi or persimmon. The general fruit flavor is then of apricot and unripen stone fruit. There's a touch of bready malt, a good amount of funk, and then a huge strong wood and oak flavor on the finish.

A well made and interesting brew.
