I live in between Peoria and Bloomington/Normal but rarely make it to Bloomington/Normal simply because I don't really know my way around that well however after finding this place on BA and thought it would be worth the trip to get some quality beer to go along with dinner. I was not disappointed. We went without a booking at around 5:30 on a Saturday and after a 30 minute wait at the bar had a table. 30 minutes was about the right amount of time to enjoy a beverage and a starter. I had a Nutty Brown Ale to go along with the beer battered asparagus. The asparagus had a very light breading, just enough to give it a wonderful texture. The brown ale was also very good. For the main course I had the Coconut Curry Mahi-Mahi paired with a Weissenheimer Hefeweizen which complemented the spicy/sweet flavor of the curry very well. I plan on going back again at the end of the month when the Oatmeal Stout and Barleywine aged in former Wild Turkey bourbon barrels is being served from their hand-pumps. My only minor complaints are that the music is a little on the loud side making conversation challenging, would have liked to have some bread or rolls served before or with the meal, and the wait staff was all wearing jeans, I would have expected nicer dress from an eatery of this nature. Destihl has taken one of the top local spots to entertain friends and family visiting from out of town.

Despite being a bit pricey for a brewpub and a restaurant in Normal, the quality of the beer and food was great. I tried the barleywine (well balanced between the significant malt presence and high IBU), the IPA (relatively low IBU for an IPA but still very good), the espresso stout (strong roasted barley/malt and coffee flavors...very tasty beer) and the Lager (a beer that both micro and macro brew drinkers could enjoy). They were out of a couple of beers listed on their website as "ON TAP" but had the ones I was most interested in trying. Their growler prices are exorbitant ($16 for a 32oz growler of the barleywine and because they were out of growlers I had them fill my 64oz which they charged their $4 growler charge in addition...total cost was $36 for less than a six pack of beer!!).
All the food was excellent, however, some of the portions could have been larger for the price. Their menu is very unusal for a brewpub but they have obviously made a major commitment to food as well as the beer. If you like Bleu Cheese try the quesadillas, they were excellent.
I will definitely go back because most of the dining options around Illinois State University where my daughter goes to school are marginal at best, particularly when it comes to quality malted beverages. While the beer is excellent, it is not worth the price they charge for growlers.

cool place. nice architecture. they have a few televisions, but i am not looking for that. i am here for the beer. have been twice- the first saturday with my wife and son and last night- but add my sis and bro-in-law and my p's. our "christmas dinner". i have had the jivaro oatmeal espresso stout, the redbird ale, and the baldock IPA. those beers are good. service is ok. accommodating staff. nice menu. i have had two of the pizzas. the brewmaster was great. the chicken and apple sausage was a little dry due to not having any sauce and goat cheese. i knew that when ordering. overall it was good. i am a goat cheese fan. other than a pork chop needing a little extra time on the grill, everyone else enjoyed there food. the kids menu is ok. the usual suspects are there. good dishes tend to be a little on the pricey side. good place to get a steak, but do not expect to get a burger or other "bar" food. go get some eats and take home a growler today.

Today was opening day, so I wasn't really expecting much out ot the service. However, there were nearly as many staff persons as customers at 2:00. Had a late lunch of the wood fired pizza while Mrs. Kdog had a portabello and brie sandwich with corn chowder. All were pretty good, above average fare compared to other brewpubs I'd been to. Had seven beers on tap ranging from a standard lager to a rye ale. Went with the IPA and the Rye. I'll definitely go back, especially since it is just off the bike trail in Normal and less than 10 minutes from my house. Didn't notice many bugs to work out, but I imagine it will be even better in a couple of weeks, especially when they bring in live music.
