Served at 45*. Poured into a SA perfect pint glass.
A- Pours a pale straw from bottle. A decent crisp white head forms before fading to a foamy capping and ring. The addition of the yeast gives the beer a gentle haze while in glass. Yeast floaties are plentiful.
S- Loads of dusty hay, mellow yeast and some tang of lemony citrus. Smell is very appealing and the different notes are in a great combo.
T- Lots of dusty hay again in the taste. Soft orange and lemon come into play. The yeast brings with it some depth. Slight white pepper is detectable. Mellow citrus with a touch of hay linger well on palate.
M- Solid medium bodied feel. Enough carbonation to make the citrus notes have a slight tingle. Goes from dry to wet (middle), back to dry (end/ finish).
O- A very well done wit. One of the better ones i've tasted. The dusty quality really sets it apart from the very citrus forward variations. I would really like to try it if they were to throw some brett into this beer.

Appearance: Cloudy with yeast sediment; peach soda colored; small white head, long lasting, good lacing
Aroma: Belgian yeast and coriander; citrus; light hops
Taste: thin mouthfeel; normal wit flavor profile, with citrus and coriander; well balanced and tasty, but too thin
Remarks: didn't score A, S, T, M at that time; please disregard those scores.

From 12 oz bottle into a Chimay chalice.
Pours a gold with minimal head.
Aroma of freshly risen bread, sourdough bread, light vanilla, cream soda.
Moderate carbonation and mouthfeel.
Flavors of soda water, vanilla, lemongrass, white pepper, coriander, lemon water, lime juice. Overall refreshing and light with some farmhouse flavors in the yeast and spices.

A: Pours out a dark gold and copper color. Unfiltered goodness floats around the glass beneath a very thin head and almost no lacing.
S: Smell is like a typical white. This one has a bit of fruit in it, however, which is nice and refreshing. Possibly a hint of cherry and vanilla.
T: Taste is wheaty with quite a bit of spice. Very refreshing, and not overpowering in the least. Most spice comes after the beer has been swallowed, and lingers in your mouth.
M: Very nice mouthfeel. Not too thin, has just the right amount of substance to keep it interesting and maintain the flavor profiles.

Appearance: glowing golden cloudy body with a one finger white head that does not leave much lacing if any yet a curtain of white lace with each sip
Aroma: very pleasing white; soft coriander, soft citrus peel, nice wheat
Flavors: I like Belgian ales and I like the Wit ales. This is pretty spot on for a Belgian-style white (wit). Soft pleasing notes of coriander, wheat, and citrus.
Mouthfeel: low yet fine fizzy carbonation, mild-medium body, light yet pleasing flavors, light wheat aftertaste (short)
To the Point: a straight and to the point Belgian-style White, I like it, it should make a very good summer ale
