750 ml corked and caged bottle, courtesy of hopdog, enjoyed in a Duvel tulip glass. Pours a hazy hue, the color of ripe banana skins. Body is animated with small carbonation bubblies. Hefty vanilla white head rises tall and stays at a lofty peak. Eventually, the head diminishes into pits, rocks, and meringue. Lacing is of the island chain and satin bedsheet variety. Impressive!
Aroma is pastoral. Coriander, white pepper, citrusy lemon, and idyllic notes of sheep pastures. Grassy and earthy hop and yeast characteristics evoke thoughts of spring mountains teeming with freshly shorn sheep. Lovely!
Mouthfeel reveals a medium body respendent with a spritzy and velvety carbonation. Herbal feel is duly noted.
Taste is characterized by a dry and herbal bitterness, enlivened by a zesty lemony citrus. White pepper and a mild coriander and mint add depth. Hints of orangezest and tangerine really make this one special. Some dirty sheep notes of sunbaked dung and freshly shorn wool provide an appropriate finish.
Wow! Best American Saisson I've encountered. This masterpiece rivals the finer examples from Belgium. What a treat! I need to shear some sheep.

750 ml bottle into tulip glass, best before 11/13/2014. Pours lightly cloudy golden amber color with a big 3 finger fairly dense and fluffy white head with insane retention, that reduces to a thick cap that lasts. Dense foamy lacing clings on the glass, with tons of streaming carbonation retaining the head. Beautiful looking brew. Aromas of big lemon zest, pear, apple, pepper, clove, wheat, bread, floral, grass, herbal, light funk, and earthy yeast spices. Damn nice aromas with good balance and complexity of fruity/spicy yeast esters with some light malt. Taste of lemon zest, pear, apple, pepper, clove, wheat, bread, floral, grass, herbal, light funk, and yeast earthiness. Lingering notes of citrus, light fruit, pepper, clove, wheat, floral, grass, herbal, and yeast earthiness on the finish for a good bit. Fantastic balance and complexity of fruity/spicy yeast esters with a light-moderate malt balance; and zero cloying flavors present after the finish. High carbonation and medium bodied; with a very smooth, crisp, and fairly prickly mouthfeel that is great. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is an absolutely incredible saison style. Fantastic balance and compelxity of fruity/spicy yeast ester flavors; and extremely smooth and crisp to sip on. One of the best Saisons I have had.

I've been really into Saisons recently thanks to Hill Farmstead so I thought it was finally time to visit this local favorite. 750ml corked and caged bottle into a Cantillon tulip.
Cork ejects with a loud pop. Beer pours a massive, 4 finger foamy white head with excellent retention. Beer is a clear goldenrod that shows ample carbonation. Lacing is patchy and thick with good stick. Doesn't get much better.
Nose is coriander, flower, Belgian yeast, clove and peppercorn. Yeasty and sweet but missing that notable, desirable funk. Still good though. Pretty aromatic too.
Opens Belgian yeast, peppercorn and coriander. Some cobwebs and more Belgian yeast and spices towards the middle. Some candied sugar notes mixed with a touch of booziness at the end. Finishes yeasty with a sweet, fruity and spiced aftertaste. Good but not real representative of the saison style.
Light bodied with ample carbonation. Prickly and lively in the mouth and goes down smooth with just a tickle. Messy finish with a lingering aftertaste. Really drinkable and refreshing.
A really solid beer overall. However, this isn't what I imagine to be a representative saison and honestly, tastes more like a Belgian Pale or even a tripel. Very sweet with big, bold Belgian yeast notes. Carbonated like a Tripel too. Furthermore, it lacks a certain funk and farmhouse character. I'd revisit this because it is an easy drinking, complex and delicious beer. However, as a saison, there are more representative offerings out there.

Appearance
Hazy gold with 1 finger of white head. Moderate-heavy carbonation.
Nose
Pear, apple, lemon, dough, peach and apricot.
Taste
Golden apple pulp, bosc pear and drops of lemon juice. Doughy bread, raw grains and spelt. Hints of apricot and nectarine. Finishes with notes of potpourri, dried grass and pink peppercorn. An earthy bitterness lingers.
Mouthfeel
Light bodied, crisp, dry and clean.
Overall
This doesn't have the Saison yeast profile that I was hoping for. There's no funk, only some potpourri and pepper. It's a very Americanized Saison but it's still a nice beer.
