Served in a small nonic at Goose Island Clybourn, quick review from notes.
Described as a "Wild Witbier" and printed as "Halfwit" on the pub menu, one word.
Pale hazy pastel yellow, trace soapy skim on the surface with flecks of random spotty lace. Rising trails of ever present carbonation visible.
Pleasant aromas of wild yeast and lightly spicy coriander. A touch floral and a little funky with wet hay notes.
Moderately tart and dry, it has a bite to it, nearly puckering but not quite. Smooth wheaty character from the wit base, and noticeable coriander. Light lemon and wet hay notes from the wild yeast. Seems like some lacto in there, the tartness is fairly clean and manageable. Enjoyed this and would order it again, it's a nice twist on the witbier style.
