Casimir was brewed by Mike Siegel, Brian Davis, and Jason Karras who decided to give nod to Polish brewing traditions after learning they all have Polish heritage. Taking inspiration from the Grodziskie, a Polish oak-smoked wheat beer, they smoked their own wheat with used Bourbon County Stout oak barrel staves at the local Chicago Hagen's Fish Market.
With Polish rye bread in mind, they added caraway seeds to the whirlpool along with Polish Lublin hops. Casimir takes it's name after Casimir Pulaski who is known to Chicago school children because they get Casimir Pulaski Day off!

Served on tap at Whole Foods. Appearance is a medium brown with orange highlights. Somewhat frothy head with great retention and tons of lacing. Aroma is full of ashy hickory smoke, significant wood character, and some mild roasted character. Taste is smoke forward with deep smokey hickory character. Toasted malts are present with a hint of herbal hops toward the back. The smoke basically dominates the flavor, but it is not overbearing. Mouthfeel is medium and smooth. Overall, unique smoked brew worth a try.

Served in a large wine glass at Durty Nellie's.
After striking out during my last visit to Chi-Town, I was relieved to see this tapped at Nellie's. It pours a murky dark burnt sienna topped by over a finger of sweet tan foam. The nose comprises cocoa, smoke (both beech and something darker that I can't put my finger on), light roasted malts, toasted rye bread, and a hint of brown sugar. The taste brings in more of the same, though the smoke (particularly the darker component) is now in center stage, with everything else revolving around her. Not that this is a bad thing, as the smoke never comes across as overwhelming or even too much. The body is a light-leaning medium, with a light moderate carbonation and a fairly dry finish. Overall, a very nice example of a semi-old-school style, one that I'd easily and readily take over that of Prof. Briem (though he does good work elsewhere).

Enjoyed at the Beer Bistro in the West Loop, Chicago IL. Served in a Goose Island branded chalice
Served with a two finger fluffy off-white head. The body is amber with dark brown hues. The head retention is excellent and a bunch of splotchy lacing coats the inside of the glass. The nose is a combination of rich toffee, light peppery spice and mild accents of smoky, charred oak. Quite complex, caramel and nutty toffee upfront and through the midpalate, joined by rye, peppercorn, and caraway that tingles the tongue. Finishes semi-dry with light smoke and continued rye and caraway spiciness. Lighter side of medium body with adequate, but gentle carbonation. Slick with malty smoothness. Highly drinkable. This beer was really impressive. The complexities are subtle, abundant, and expertly balanced. The result of the creativity that went into Casimir exceeded my expectations. A true pleasure to drink.

A new Fulton & Wood series installment, inspired by the historical Grodziskie style, a Polish smoked wheat beer. Brewed with rye malt, caraway seeds, Polish Lublin hops, and wheat smoked locally over Bourbon County barrel staves at Hagen's Fish Market.
Served in a rounded dimpled mug, brimming with light tan foam. Color is black from the roasted rye malt, with a brownish red glint in the light.
Soft smoke in the nose, but it's fairly subdued and definitely not overpowering. Light roast malt and vaguely bready malt sweetness. Not much that could be identified as caraway so far.
Mellow smooth roastiness, pleasant mild smoke, light spice of the caraway seed and some rye malt depth. Light to medium bodied, very smooth and pretty drinkable. Made a good pairing with smoked salmon and pierogi. Overall a very season-approriate installment of the Fulton & Wood series, one i'll look for again on tap around town.
