On draft at Uncommon Ground on Grace.
Brilliant saturated orange with a thin layer of white foam that leaves behind threadlike spindly lacing. A stray tiny bubble rises every so often from the center.
Softly fruity aroma of sliced red apples and a vague hint of spice. A little more spruce here would be nice. Flavors of tart apples with a mellow spruce component that comes through in the aftertaste. Slight basic malt presence that gets sidelined by the expressive fruity yeast and spruce tip additions. Light and crisp, it's very nice as an aperitif.

Appearance is deep clear orange with a collar of dense white head. Nose features some belgo yeast and lemon paired with earthy spruce notes. Taste has citric tartness paired with pine needles and spruce. Sweetness comes at the end in the form of honey. Some notes of white grapes sneak through at the end as well. Mouth feel is light with high carbonation. Overall, interesting and unique, but not totally enjoyable.

Had on tap at the globe pub. Pours a amber/copper color with a foamy head.
Different aromas of fruitcake, Logan berries, malts and some spices. A bit off balance with the berries and fruitcake dominating.
Medium bodied with a decent feel. Fruitcake and Logan berries dominating along with some Christmas spices as well.
Wasn't fully sure what to make of this. It was decent, but not really great either.

Had this on tap at the bavarian lodge in lisle, a solid copper color with a very fine white head that laced nicely, on the nose is a small ammount of fruit but large pine. Not hoppy pine but actual pine tree smell. The taste I described as tasting like Christmas. Very earthy and of course lots of pine. Overall this beer was nothing like I have had before and I loved it. If you see it have a glass, I would seek it out again.

Served in a tulip glass at the Clybourn brewpub.
The newest (fourth) release in GI's Fulton and Wood series is a Belgian pale ale brewed with spruce and lingonberries. It pours a clear copper topped by a finger of dusty white foam. The nose comprises dank greens (think the wettest moss/algae ever), mild leek, light pine, light caramel, and a vague sense of blueberry skin. The taste holds notes of dark berries, stonefruit, light pine sap, spruce twigs, and very light grass and greens. Things taste strangely vegetative, with a hint of random berries that just can't coexist very well with their surroundings. The body is a light medium, with a light moderate carbonation and a lightly syrupy feel. Overall, this beer just didn't sit well with me at all. For the first time in a long time, I couldn't finish the glass poured for me. The slightly odd smell and muddled, clashy, and unappealing flavors just kept me from any sort of enjoyment whatsoever.
