Part of a taster flight at the Clybourn brewpub.

A - Half-finger of white foam settles to a thing ring and spotty lace. Lightly hazed golden-brown body.

S - Hefty bourbon aroma, with notes of butterscotch, and a bit of fruitiness from the base maibock. There's also an apple note - acetaldehyde? Potent nose. As this warms up there's a bit of acetone as well.

T - Taste is extremely sweet, with large amounts of butterscotch, vanilla, caramel malts, and again a bit of that tart appleskin flavor. Finishes with an oak and lightly sour bourbon bite to it.

M - Medium-full body, chewy texture, lower carbonation, and a mildly tannic finish. Light warming alcohol is present, but consistent with the listed ABV.

D - Not sure this Maibock needed to go into a bourbon barrel, but I'm not overly impressed with the outcome. It also smells and tastes boozier than you'd expect for a 7.5%. This isn't an experiment that I'd repeat in the future.
